Gnocchi Pasta Salad

 

 
Sorry I have been a bit MIA lately, things have been really busy here.  We haven’t had a free weekend since the beginning of May and everything has been really busy.  My little brother is getting married this weekend.  I am really excited for him, but still can’t believe it is happening in a way, he still seems so young to me.  I guess that is how it is being the older sister, that your sibling always seems so much younger than you.
I am a bridesmaid in the wedding, my husband is a groomsman, and both of my sons are ringbearers. The bridal shower was at the end of April and two weeks ago I had the bachelorette party.   We went away for the weekend to a resort and a casino.  I had fun, but I missed my boys.  On Friday we have the rehearsal dinner.  My parents are hosting it at their house and have food being catered in.  There are about 45 people coming, so it is going to be a huge affair for my parents.  I decided to help my mom out by making the desserts.  My brother and future sister in law both love cheesecake, so I have been busy making cheesecakes all week.  So that’s what I’ve been up to.
This past weekend was at least a little less hectic and we were able to relax on Memorial Day.  We got together with my in laws to have a cookout.  My family are big fans of gnocchi.  If you have never had gnocchi, you need to try it.  It is essentially a combination of pasta and potatoes.  They are little potato dumpling wrapped in pasta.  So delicious and amazing! I decided to make a combination potato/pasta salad using gnocchi. This is a potato and pasta salad all wrapped into one and is perfect for the summer.
 
This Gnocchi Pasta Salad was so delicious and the perfect side dish for your summer cookout.  I used my pasta and potato salad recipes and substituted gnocchi.  With the potato dumplings, it really makes it seem like a combination of a potato and pasta salad.  My whole family loved this and it was the perfect side dish for our summer cook out.  I hope that you try this delicious pasta salad, it is a must try!

 

 

 

Gnocchi Pasta Salad

Ingredients

  • 2 lbs gnocchi
  • 1 cup mayonnaise
  • 2 tablespoons vinegar
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1 tablespoons fresh chives, chopped
  • 1/3 cup Parmesan cheese, grated
  • 1/2 cup tomatoes, chopped
  • 1/2 cup bacon, chopped

Instructions

  1. Boil the gnocchi according tot he package directions.  Once the gnocchi is done rinse them off in cold water.
  2. Meanwhile, add the mayonnaise, vinegar, salt, sugar, and black pepper to a large bowl and stir together.  Once the gnocchi is done add them in and stir to combine.   Then add in the bacon, cheese, tomatoes, and chives and gently stir until combined.
  3. Refrigerate the potato salad until ready to serve.
