Taco Zucchini Noodles

Do you have a Taco night at your house?  We have tacos once a week on Monday nights.  I know most people do Taco Tuesdays, but we for some reason started it on a Monday night and now my 4 year old is insistent that we have tacos every Monday night.  We are not allowed to change the day or eat anything else on Monday nights or he gets upset.  I have been trying to eat healthier so last week we decided to change up Taco Monday to something a little bit more healthier.
 
For the past 2 months I have been lose weight and eat healthier.  When I started I had gotten to the highest weight I had been at when I wasn’t pregnant.  I have lost 15 pounds and I have been really proud of that. I have also been making an effort to make sure my family eats healthier too and to make sure that my boys are getting enough vegetables.  So instead of tacos last week, we decided to have Taco Zucchini Noodles, or Taco Zoodles, as we call them.  I combined the traditional ingredients for tacos with zucchini noodles, to get a healthier version of tacos.
 
 
These Taco Zucchini Noodles were so delicious and was really a meal that I could feel good about feeding to my family.  I used ground turkey for the meat so that it is healthier, plus that is what my family uses in tacos anyway.  I seasoned the ground turkey with taco seasoning.  You can use as much or little seasoning as you want to make it as spicy as you want.  I then added in diced tomatoes.  If you want you can use Ro-tel, I am not a big pepper fan, so I just used regular diced tomatoes.
 
I really love how easy that this meal is as well. It all comes together pretty easily and cooks in one pot, so that means less dishes too.  This is a great healthy dinner that the whole family will love.  The zoodles really make it seem like you are eating pasta, so it doesn’t feel like a healthy meal.  I will definitely be making this for my family to substitute some of our taco nights.  I hope your family enjoys this delicious meal!
 
Taco Zucchini Noodles

Ingredients

  • 1 pound ground turkey
  • 1 package Taco Seasoning (or use less if you don't like it as spicy)
  • 1 can (10 ounces) diced tomatoes or Ro-tel
  • 1 tablespoon tomato paste
  • 1 cup water
  • 4 small zucchinis, cut into noodles
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Cook the ground turkey in a large skillet on medium-high heat for about 5-7 minutes, or until it is browned.  Make sure to crumble the ground turkey as it cooks.  Then stir in the taco seasoning and drain any excess fat. 
  2. Stir in the diced tomatoes, tomato paste, and water until combined.  Then add in the zucchini noodles. Bring to a boil and then continue to cook on medium-high for  3-5 minutes or until the zucchini noodles are tender. 
  3. Turn the heat to low and add the cheeses, stirring until the cheeses are melted.  Serve immediately.
