Strawberry Mojito Salsa

Today in Pennsylvania is primary election day.  I don’t like to talk about politics much on the blog, but it is the big news in the state for today.  Every Tuesday night my husband and I have been watching the primary election results.  We like to watch and see what the political pundits have to say about the candidates.  It will be nice to watch the results tonight and see what they have to say about the results in my state.
While watching the results, or any TV for that matter, it is always nice to have a snack to munch on while watching.  The other week I made this delicious Strawberry Mojito Salsa to eat as a healthier snack and the whole family loved it. The great thing about this salsa is that it is made with strawberries, which gives it a sweeter flavor.  The lime, mint, and strawberry vinaigrette give it some savory undertones.  This great combination of sweet and savory makes a great salsa and it is perfect for a healthy snack.
This Strawberry Mojito Salsa is a delicious snack that the whole family will love.  Strawberries are one of my favorite fruits, so I love the idea of a salsa made out of strawberries.  This tastes great with the lime and mint flavors of a mojito.  This salsa is great for the summer and would be great for summer picnics or parties as well.  I plan on making this for Cinco de Mayo as well.
I really like that this salsa is both sweet and savory.  My husband said that he really liked it because he likes sweeter salsas.  I served the salsa with cinnamon pita chips for more of a dessert feel, but you can also serve it with regular pita chips or corn chips.  This salsa is great for a snack, to bring to a picnic, or would also be great to have for a healthier dessert.  I hope you enjoy this delicious salsa. I know I can’t wait to make it again!

Strawberry Mojito Salsa

  • 2 tablespoons mint, finely chopped
  • 1 tablespoon lime zest (about 1 medium lime)
  • 1 tablespoon of lime juice (about 1 medium lime)
  • 1 tablespoon strawberry vinaigrette
  • 1 tablespoon honey
  • 1/4 teaspoon sea salt

  1. Add the strawberries, mint, lime zest, and lime juice into a medium sized bowl and mix together until combined.
  2. In a small bowl, whisk together the strawberry vinaigrette, honey, and sea salt.  Add this mixture into the strawberries and stir to combine.  Refrigerate until ready to serve.  Serve with pita chips or corn chips.
