Strawberry Mint Lemonade

I just want it to feel like spring already! Here in Pennsylvania the weather has been awful.  It has been so cold this week and they are saying that there might be snow flurries this weekend.  What? It’s April already, it’s supposed to be warm so we can be outside, it’s not supposed to snow! I think it’s especially bad, since we had one week in March where it reached the 80’s.  I am sick of being stuck inside and wearing winter clothes.  Bring on all the great spring weather and spring clothes.
When I am picturing spring, I am thinking of sitting outside in the beautiful sunshine sipping a nice cool drink and looking at all the pretty flowers and plants that are starting to bloom.  Lemonade is one of my favorite spring and summer drinks.  It is so refreshing on a nice day.   Last week for Easter, I was really hoping it would be nice out and decided to make some lemonade to bring to our family celebration.  I decided to make strawberry lemonade, because strawberries are another thing that remind me of the spring and summer.  I added mint to the lemonade as well to give it a really great flavor.
This Strawberry Mint Lemonade is so refreshing and has really great flavor.  I love the flavor that the strawberry and mint bring to the lemonade and it all goes great with the lemon flavor.  This drink is perfect for the summer and spring and would be great to drink on a hot day.  You could also add alcohol to spike the lemonade if you wish, I bet that would taste really good as well.
I will definietly be making this again.  It was finished quickly at our Easter celebration. This is great to bring to parties as well, as I might be bringing some to a bridal shower I’m planning and to my son’s birthday party.  I hope you enjoy this delicious lemonade and hope you start getting some great spring weather!



Strawberry Mint Lemonade


  • 2 cups strawberries, sliced
  • 2 cups sugar
  • 8 cups water
  • 1 cup lemon juice (about 6 lemons)
  • 12 mint leaves
  • Ice


  1. Combine the sugar, 2 cups of water, and the strawberries in a small saucepan.  Bring the mixture to a boil, stirring to make sure that the sugar has dissolved.  Boil for 1-2 minutes or until the syrup turns pink.  Remove from the heat and allow the syrup to cool for about 30 minutes.
  2. Once the syrup has cooled strain out the strawberries if desired (I just poured them all into the lemonade).  In a pitcher combine the syrup, lemon juice, 6 cups water, and the mint leaves.
  3. Refrigerate until ready to drink.  Serve over ice.  Garnish with additional strawberries and lemon slices.
