Strawberry Margarita Banana Bread

It is finally starting to feel like spring outside, so that has been making me really happy.  I cannot believe that it is almost May already, this year has been going really fast.  With the beginning of May comes Cinco de Mayo.  I always like to make recipes for Cinco de Mayo.  When I think of the holiday, I think of margaritas.  My favorite margarita is a strawberry margarita, so I love making recipes with that flavor.  This year I decided to make some Strawberry Margarita Banana Bread.
Even though I always make recipes for Cinco de Mayo, I usually don’t celebrate the holiday once.  We may have Mexican themed food for dinner, but that’s about it.  The only time that I can remember celebrating Cinco de Mayo was when I was in my last year of grad school.  During my last year of grad school, my last day of finals ended up being on May 5.  My husband and I went out with a bunch of my friends from grad school and we decided to celebrate being done with school. My husband was our designated driver since it was a Wednesday night and he had to work the next day.  I am usually not much of a drinker, but I did a bunch of tequila shots that night.  That will probably be the first and last time that I go out to celebrate Cinco de Mayo.
This Strawberry Margarita Banana Bread was do delicious and is a great treat and would also be good for breakfast or dessert.  I really liked the combination of the banana bread with the strawberry and lime flavors.  I then added a strawberry margarita glaze on top of the bread, that gives it even more strawberry margarita flavor.  This bread has no alcohol in it, so it’s good for the whole family, but you can always feel free to add some.
This bread would be the perfect way to celebrate Cinco de Mayo.  Add in a strawberry margarita and that would make it even better.  The strawberry and lime flavors in this banana bread would make it good for any day of the year.  My husband brought this to school and everyone devoured it.  I can’t wait to make this delicious bread again.  I hope you enjoy it!


Strawberry Margarita Banana Bread


  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/2 cup sour cream
  • 1 cup mashed banana
  • 3/4 cup strawberries, chopped
  • 1 tablespoon lime zest (about 1 medium lime)
  • 1 tablespoon of lime juice (about 1 medium lime)
  • 1 1/3 cups powdered sugar
  • 1/3 cup non-alcoholic strawberry margarita mix


  1. Preheat the oven to 350 degrees.
  2. Beat the butter and sugar until they are creamy. Then beat in the eggs and vanilla.
  3. Combine the baking soda and the flour and slowly beat in the flour mixture to the butter mixture.
  4. Then stir in the bananas, sour cream, strawberries, lime zest, and lime juice until combined.
  5. Pour the banana mixture into a greased 9x5 pan. Bake for 1 hour to 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan and then remove.
  6. To make the glaze, whisk together the powdered sugar and strawberry margarita mix in a small bowl. Drizzle the glaze onto the cooled bread.
