Thin Mint Icebox Cake

It’s that time of year again, Girl Scout cookie time.  I bought my boxes a few weeks ago.  I love to buy some boxes to eat and I always add a couple of boxes to bake with.  I was a Girl Scout until I was 15 years old, so I always like to support the girls.  I bought my cookies from a really cute group of Daisys at the mall.
I remember one of my favorite things about selling cookies is when we got to sell them at the mall.  While selling the cookies I got to hang out with my friends from Girl Scouts and we got to always eat at the mall, which usually meant a pretzel dog and a slushie.  We also always got to wonder around and take a break by looking in the kids jewelry store.  Those were good times.
I decided to start my cooking with Thin Mints and make an icebox cake.  I have always seen these on Pinterest and thought that they look so good.  My icebox cake is layers of Thin Mint cookies, chocolate pudding, and whipped cream.  I then drizzled crushed Thin Mints, chocolate chips, and chocolate syrup on top.  The Thin Mints don’t get as soggy as if you made this with Oreos, but I really liked the crunchiness of the cookie with the pudding and whipped cream.
This Thin Mint Icebox Cake was so delicious and was such a decadent treat.  The best part is that it is really easy to make.  I really liked the taste of the Thin Mint cookies with the chocolate pudding and whipped cream.  I added some mint extract to my chocolate pudding to make it more of a minty flavor.
When Thin Mints are not in season you can still make this great dessert by using the Grasshopper equivalent or even by using Mint Oreos.  This dessert is a great way to make something delicious using Thin Mints and is a great way to buy some extra cookies so that you can support the Girl Scouts.  I hope that you enjoy this delicious dessert!




Thin Mint Icebox Cake


  • 1 package Thin Mint cookies (if not available use Keebler Grasshoppers or Mint Oreos)
  • 1 box (3.4 ounces) chocolate pudding + the ingredients on the back of the box
  • 1/2 -1 teaspoon mint extract
  • 1/2 cup milk
  • 1 package (8 ounces) Cool Whip
  • 1/4 cup semi-sweet chocolate chips
  • Chocolate syrup


  1. Make the chocolate pudding according to the directions on the back of the box.  Add in the mint extract into the chocolate pudding.
  2. Put the milk into a small bowl.  Dip the Thin Mints in the milk and then place them on the bottom of an 8x8 baking dish in a single layer.
  3. Place half of the chocolate pudding on top of the Thin Mints.
  4. Repeat with another layer of the Thin Mints and the rest of the chocolate pudding.
  5. Spread the Cool Whip on top of the second layer of chocolate pudding.
  6. Sprinkle crushed Thin Mints and the chocolate chips on top of the whipped cream.  Drizzle with chocolate syrup.  Keep in the refrigerator.
