Cannoli Cookie Cups

My husband and I always like to bake cookies around the holidays.  Now that my oldest is old enough to help I like to get him into the tradition too.  However, while I love to bake, it is hard to find the time for it.  We are always so busy around the holidays.  We not only like to bake for ourselves, but we like to bake cookies to give as gifts as well.  We usually bake cookies for my co-workers, my husband’s co-workers, and for the boys’ teachers.  That is a lot of cookies and a lot of time.  I like to use anything that will help me make the cookies easier, but still taste like they are from scratch.
My favorite thing to use is Betty Crocker®Cookie Mixes so that I can just add a few ingredients and make the cookies much easier. Betty Crocker® cookie mix products offer an easy and quick solution for creating delicious holiday desserts.  These mixes help you to “Spread Cheer with Simple Surprises”.   Betty Crocker has easy solutions and convenient products at an affordable price. I love that I can use a mix to make my cookie baking easier and I can then add ingredients to make the cookies all my own.  I have been using these mixes for years and nobody has ever known that they are not from scratch.


Last weekend my sons and I went to Walmart to purchase Betty Crocker® cookie mixes.  We decided to pick up the Betty Crocker® Sugar Cookie and Peanut Butter cookie mixes to use in our baking.  My favorite thing to make with the peanut butter cookie mix are peanut butter blossoms.  I also like to stick peanut butter cups into the peanut butter cookies as well.  Everyone loves those cookies and they are perfect for cookie exchanges around the holidays.
With the sugar cookie mix I decided to cook the dough in a mini muffin tin so that I could make cookie cups.  When deciding what to fill the cups with, I had a brilliant idea, to fill them with cannoli filling.  I have been on a huge cannoli kick lately and buy them everytime I go to the bakery in the city.  I thought it would be great to combine the taste of sugar cookies and cannoli filling.  Plus the cookie cups are made really easily using the cookie mix.
These Cannoli Cookie Cups were amazing and were a big hit at our house and with my husband’s co-workers.  I really loved the taste of the cannoli filling combined with the sugar cookie.  Plus these look really great with the mini chocolate chips and powdered sugar on top.  I will definitely be making more of these to give away closer to the holidays and to bring to holiday parties.
I love how easy these cookie cups are to make using the Betty Crocker® Sugar Cookie mix.  This helps to save a lot of time in the kitchen, so that I can spend more time enjoying myself and my family around the holidays.  Anything that can make my life easier and save me time around the holidays is great.  I can’t wait to make more of these little cookies this year and in the years to come.  Enjoy!




Cannoli Cookie Cups


  • 1 pouch (17.5 ounces) Betty Crocker® Sugar Cookie mix
  • 1/2 cup butter, softened
  • 1 egg
  • 3/4 cup ricotta cheese
  • 3/4 cup marscarpone cheese (If can't find marscarpone just use 1 1/2 cups of ricotta total)
  • 1/4 powdered sugar
  • 3 tablespoons whipped cream or heavy cream
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • Mini chocolate chips
  • Additional powdered sugar for sprinkling


  1. Preheat the oven to 350 degrees.
  2. In a medium sized bowl mix together the Betty Crocker® Sugar Cookie mix, the butter, and the egg, until a soft dough forms.
  3. Make teaspoon sized balls of dough and place each ball in the cup of a mini muffin tin.  You can use a regular sized muffin tin, the cups will just be bigger.
  4. Bake the cups for 7-9 minutes or until the sides are golden brown and the center is cooked.
  5. Immediately after pulling the cups out of the oven, used a teaspoon or other small circular shape to press down the down in the center of each cookie, forming a cup.  Let the cookie cups cool.
  6. Meanwhile, while the cookies are baking or cooling, make the cannoli filling.  In a large bowl mix together the ricotta cheese, marscarpone cheese, powdered sugar, whipped cream, vanilla, and cinnamon until combined.  Refrigerate the filling until the cookies are ready to be filled.
  7. Once the cookies are cooled, spoon the filling into a piping bag or plastic bag, cut a hole in the end, and pipe the filling into the cookie cups.
  8. Sprinkle the mini chocolate chips and powdered sugar on top of the cannoli filling.
  9. Keep the cookies in a closed container and refrigerate.  Makes about 3 dozen cookies.
