Slow Cooker Breakfast Casserole

With school having started up again, I am always looking for easy recipes to make for breakfast or dinner.  I want to make sure that my kids get a good meal but I don’t always have a ton of time to prepare it.  I especially love recipes that are fast and easy.  I have been trying to use my slow cooker or crock pot more often to try to help me in making easy and fast recipes. I love that I can just throw ingredients in the slow cooker and it cooks all day or night without me having to do anything.
We are big fans of breakfast for dinner and we like to have that for dinner at least once a week.  Our favorite meal to have is scrambled eggs and we like them with lots of cheese in them. We even like to add cream cheese to our eggs as well to make them really cheesy.
Crystal Farms Cheese is a great cheese brand that is committed to providing high quality cheese products.  This Wisconsin cheese is a natural product with few preservatives.  It is a rich source of calcium, is gluten-free, and lactose tolerant.  I really like that the cheese contains low levels of lactose because that means that my son and I can enjoy it.  
I decided to use Crystal Farms shredded cheddar cheese and cream cheese and use them to make a slow cooker breakfast casserole.  The best thing about this casserole is that you can serve it for breakfast or for dinner.  Plus it is so easy, you can just throw the ingredients in the slow cooker and leave it overnight or all day.  This is a great easy recipe for the weekdays.  It allows you to have breakfast ready for your kids when you all wake up without any effort in the morning or it allows you to have dinner ready when you come home.
This Slow Cooker Breakfast Casserole was delicious and so easy to make.  We decided to eat it for dinner so we just put the ingredients in the slow cooker in the morning and the dinner was ready when we came home from work.  The casserole contains eggs, bacon, diced potato hash browns, and Crystal Farms shredded cheddar cheese and cream cheese.  There really isn’t much prep involved, which is really great for a week day. This was a tasty easy breakfast that my whole family loved.  I hope yours enjoys it as well!

Slow Cooker Breakfast Casserole


  • 6 eggs
  • 1 1/2 cups Crystal Farms shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 4 ounces Crystal Farms cream cheese
  • 1/2 bag (32 ounce bag) diced frozen hash brown potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk (I used soy milk)


  1. Spray the slow cooker with cooking spray and put the hash browns on the bottom of the slow cooker.  Add in the bacon, shredded cheese, and cream cheese.  Stir together to combine.
  2. In a bowl whisk together the eggs, milk, and salt and pepper.  Add into the slow cooker and mix to combine.
  3. Cook on high for 3-4 hours on on low for 6-8 hours on overnight on low.  Once done mix together to combine the melted cheeses before serving.  Serves 3-5 people.  Double the recipe if serving more.

    • Actually, I’d make slow cooker french onion soup first using Crystal Farms cheese. It is so decadent & delicious!
