Peanut Butter Cookie Dough Ice Cream

Ice cream is one of the best ways to cool off on a hot day.  Homemade ice cream tastes fantastic and is actually easy to make.  Earlier this summer I decided to make some ice cream for my husband as he is a big fan.  His favorite ice cream is chocolate chip cookie dough.  Since he is a big fan of peanut butter I decided to make him a peanut butter ice cream with bites of peanut butter cookie dough in it.
This ice cream is a no churn ice cream, so you do not need an ice cream maker to make it.  You just need Cool Whip and sweetened condensed milk to make this tasty peanut butter treat.  It really couldn’t get any easier than mixing those ingredients together and freezing it to get a delicious and creamy ice cream treat.
This Peanut Butter Cookie Dough Ice Cream tasted fantastic and was a great treat for a hot day.  The ice cream was so creamy and smooth and the best part was that it was easy to make.  I really loved the peanut butter cookie dough bites in the ice cream.  They are made with no egg and they tasted just like peanut butter cookie dough.  They tasted fantastic mixed in with the peanut butter flavored ice cream.  If you love peanut butter this ice cream is a must have.  I hope that you enjoy it!



Peanut Butter Cookie Dough Ice Cream


    Peanut Butter Cookie Dough
  • 1/3 cup butter, softened
  • 1/3 cup peanut butter
  • 1/3 cup brown sugar
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 tablespoon milk
  • Peanut Butter Ice Cream
  • 2 containers (8 ounces each) Cool Whip
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup peanut butter


    Peanut Butter Cookie Dough
  1. Cream the butter, peanut butter, brown sugar, and sugar together in a medium sized bowl.
  2. Beat in the milk and the vanilla.
  3. Slowly add in the flour and mix until combined.
  4. Shape the cookie dough into teaspoon sized balls and place on a cookie sheet covered with parchment paper.  Freeze for at least 30 minutes.
  5. Peanut Butter Ice Cream
  6. Whisk together the Cool Whip, sweetened condensed milk, and peanut butter until combined.
  7. Pour 1/3 of the mixture into a freezer safe container.
  8. Evenly add in 1/3 of the peanut butter cookie dough on top of the ice cream mixture. (I made the cookie dough even smaller by cutting the balls into half)
  9. Repeat with the rest of the ice cream mixture and cookie dough.  Run a knife through the ice cream to make sure that the cookie dough is evenly mixed in.
  10. Cover and freeze for 4-6 hours or overnight.
