Blueberry and Strawberry Cheesecake Parfait

 
I cannot believe that the 4th of July is coming up this weekend, the summer is going so fast.  The town I live in already had fireworks over this past weekend.  They had a little festival before the fireworks with a bunch of food trucks set up.  We decided to go get dinner at the food trucks but didn’t think we would stay for the fireworks since we had two little kids.  My 4 year old gets scared very easily and was scared at fireworks last year, even though later he said he liked them.  I also didn’t know how my 9 month old would react to the fireworks.
 
We got dinner at the food trucks and were walking around when we ran into some friends we hadn’t seen in over a year.  They had a baby about the same age as our 9 month old and it was nice to catch up with them.  We decided to stay for the fireworks because it allowed us to catch up with our friends.  My 4 year old didn’t like them at first due to the loud noise, but once we told him to pick out his favorite, he loved looking at the different colors and shapes.  The baby surprisingly loved the fireworks.  He was glued to them and really seemed to like looking at the different colors and didn’t mind the loud sound at all.
 
We may go see some more fireworks on Saturday.  We are definitely going to have a cookout and I plan on making some more of these no bake cheesecake parfaits that are perfect and festive for the 4th of July.  Plus they are so easy to make and taste fantastic.
 
 
This Blueberry and Strawberry Cheesecake Parfait is a delicious dessert that is incredibly easy to make.  These make a great dessert for the 4th of July or for summer.  I made mine in mason jars, but you could always make them in cups or another container.  These make about 2 large parfaits or 4 smaller parfaits.  These parfaits pair no bake cheesecake layered with strawberry and blueberry pie filling and then they are topped with whipped cream.  These were so delicious and I can’t wait to make them again for the 4th of July.
 

 

 

 

Blueberry and Strawberry Cheesecake Parfait

Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 container (8 ounces) Cool Whip
  • Blueberry Pie Filling
  • Strawberry Pie Filling

Instructions

  1. In a medium-sized bowl, beat together the cream cheese and sugar until combined.  Then gently stir in 1/2 of the container of Cool Whip.
  2. Place a layer of the cheesecake in 2 mason jars or parfait glasses or in 4 smaller cups.   Then place a layer of the strawberry pie filling on top.  Repeat with another layer of cheesecake and then a layer of blueberry pie filling. Top the parfaits with the remaining Cool Whip.
