Watermelon Bellini

 
I just realized that Mother’s Day is only in a couple of weeks.  I knew that it was coming up, but I did not realize it would be here so soon.  I have no idea what we are doing on Mother’s Day.  Usually we spend the day before Mother’s Day with both my mom and my mother-in-law and then I like to spend Mother’s Day as a family with my husband and kids.  We usually like to do something special together and have a fun day.
 
For my first Mother’s Day when my oldest son was 10 months old we stayed home and my son played in a baby swimming pool.  When my son was 1 we took him to the aquarium, which was a lot of fun.  Last year we went to Chocolate World and Zoo America.  I am not sure what we will do this year.  We usually kind of wing it and see what we feel like doing .  Plus we have an infant now, so it is hard to go too far.  One thing we always do to celebrate is to have breakfast.  I always like to make a fun breakfast cocktail that I can also make without alcohol for my son.
These Watermelon Bellinis tasted fantastic and were so refreshing.  Plus I love the pink color, which makes them so much more fun.  These are also easy to make.  All you need to do is puree watermelon in a blender and then mix it in a glass with either champagne or sparkling apple cider.  These are the perfect summer cocktail and would be perfect for a summer brunch, especially Mother’s Day.  I especially like that you can make non-alcoholic versions for the kids with sparkling cider.  My son felt that he was having such a fancy drink.  I can’t wait to have one of these great bellinis again!

 

 

 

 

Watermelon Bellini

Ingredients

  • 1 cup watermelon, cubed
  • Champagne or sparkling cider

Instructions

  1. Puree the watermelon in a blender.
  2. Evenly divide the puree between 4 champagne glasses.  Fill the glasses with champagne or sparkling cider.  Garnish with a piece of watermelon if desired.

  2. I was just wondering what we are doing this year myself. I am thinking I would love to spend some time in my vegetable garden. Other than that I don’t know. A walk with the kids. I’m hopingfor warm weather. Love these bellinis and that it is just pureed watermelon! So fresh and pretty.
