Strawberry Margarita Cheesecake

Last month I told you that I was trying Young Living Essential Oils.  I have really enjoyed learning to use the oils and the benefit that they have given me and my family.  Last week my son had an infection in his eye and we diffused lavender every night to help with the infection.  He was also on antibiotics, but I can see a difference that the lavender oil was making as well.  Plus I love lavender oil because it is so relaxing.
Diffusing lavender every evening has really helped me to unwind as well.  Last night we combined it with some lemon in the diffuser and I really loved the smell and how it helped with stress.  Since I get stressed out very easily, I also love Stress Away and have been carrying it with me everywhere.  I wear it like perfume and I love the combinations of smells.  I can’t wait to continue exploring the oils and continuing seeing the benefits on my family.
Last month in my Essential Rewards order, I decided to purchase lime.  I love the smell of lime and can’t wait to try diffusing it.  If you are not sure what Essential Rewards is, it is a monthly order where you can get discounts and points just for ordering every month.  I think it is a great perk of Young Living Essential Oils.
This month I got together with some other bloggers to make some great recipes using lime essential oils.  2-3 drops of lime essential oil is equal to the zest of 1 lime.  I decided to make a delicious strawberry and lime cheesecake.  You can either use the essential oils in this recipe or use lime zest.
This Strawberry Margarita Cheesecake was so delicious, I loved the lime and strawberry flavors.  This cheesecake is non-alcoholic and is flavored using a non-alcoholic strawberry margarita mix.  I then topped the cheesecake with some delicious fresh strawberry and lime sauce.  The combination of the cheesecake with the sauce went so well together.  I made this cheesecake for my mother-in-law’s birthday and it was devoured.  I hope you try this delicious cheesecake!

**Note: You can substitute the lime zest with just 2-3 drops of Young Living Essential Oils Lime Essential Oil.

Strawberry Margarita Cheesecake

  • 9 Graham Crackers, crushed
  • 1/4 cup butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 1/2 cup non-alcoholic strawberry margarita mix
  • 1 tablespoon lime zest (about 1 medium lime) OR 2-3 drops Young Living Lime Essential Oil
  • 1/8 cup lime juice (the juice from 1 medium sized lime)
  • Strawberry Lime Sauce
  • 1 cup strawberries, quartered
  • 1/8 cup lime juice (the juice from 1 medium sized lime)
  • 1/2 cup sugar

  1. Preheat the oven to 350 degrees.
  2. Take the crushed graham crackers and mix with the melted butter. Press the crust into the bottom of a 9 inch spring form pan lined with parchment paper or tin foil.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Then beat in the eggs, the vanilla, the strawberry magarita mix, the lime zest or lime essential oil, and the lime juice.
  4. Pour the batter into the spring form pan on top of the crust. Bake the cheesecake for 50 minutes to 1 hour or until a knife inserted in the center comes out clean. Remove the cheesecake from the oven and allow to completely cool.
  5. Meanwhile to make the Strawberry Lime Sauce, combine the strawberries, lime juice, and sugar in a blender and puree.
  6. When serving, drizzle the strawberry lime sauce on top of the cheesecake.  Refrigerate until ready to serve.

Important Note about ingesting Essential Oils:
Not all essential oils are edible. Due to lack of purity, 98% of essential oils sold should NOT be ingested. An edible essential oil will be labeled “therapeutic-grade” and have a “Supplement Facts” box on the label showing the nutritional value – do NOT use just any brand of essential oil for cooking/flavoring foods. Be sure to use pure oils from reliable sources, not synthetic scents or flavorings.
