REESE’S Peanut Butter Cup Mini Cheesecakes

Have you been watching the big college basketball tournament?  My husband and I usually don’t pay too much attention to college basketball until the tournament rolls around.  We are both competitive, so we like to fill out brackets and compete against each other, even though we don’t know that much about each team.  Unfortunately the team that I had winning my bracket already lost this weekend, so my bracket is done.
 
My almost 4 year old loves sports so my husband and I thought it would be fun to have him fill out a bracket this year.  We told him a little bit about each team and he picked based on what we told him and the colors and mascots.  He had a lot of fun doing it and was so excited to try to beat mommy and daddy’s bracket.  He picked a lot of upsets in the first round and decided to pick the team where my brother and sister went to school to win the whole thing.  He is actually doing surprisingly well and his winner is still in it, so he has a good chance of doing really well.
 
We spent some of the weekend watching the different basketball teams and rooted for our brackets.  My son was getting so into it that I decided to make some great treats to eat while watching the basketball games.  Our favorite candy in our house is REESE’S, so we went to Walmart to pick up some for our basketball treats.
 
 
We went straight to the candy aisle in Walmart and picked up some REESE’S Peanut Butter Cups and REESE’S Pieces.  I decided to make mini peanut butter cup cheesecakes. I decided to use the REESE’S Peanut Butter Cups on the bottom of the cheesecakes like a crust and then decorate some of the cheesecakes to look like basketballs.  I thought that this would be a perfect project for my son to help with.
 
 
These REESE’s Peanut Butter Cup Mini Cheesecakes tasted so fantastic.  I loved the peanut butter cup on the bottom of the cheesecake and it went fantastic with the peanut butter cheesecake.  The peanut butter cheesecake was so creamy and this was a perfect bite size treat to eat while watching the basketball games.
 
I loved that these can be decorated and my son and I had so much fun decorating them to look like basketballs.  We decided to decorate the cheesecakes in three different ways, two of which were like basketballs.  We started by dipping the cheesecake in orange colored chocolate and then with black frosting, I drew the lines of a basketball on the chocolate.  The next one, which was my son’s favorite, was to cover the top of the cheesecake with orange REESE’S Pieces.  Then I drew the basketball lines on top with the black frosting.  Then third, I just chopped up a Reese’s Peanut Butter Cup and put it on top of the cheesecake.  These are great for game day and would be perfect for any party.  I hope you try these delicious bite sized treats.

 

 

 

 

REESE’S Peanut Butter Cup Mini Cheesecakes

Ingredients

  • 9 REESE'S Peanut Butter Cups
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1/4 cup peanut butter
  • 1 egg
  • 1/2 teaspoon vanilla
  • Optional Decorations:
  • Orange REESE'S Pieces
  • REESE'S Peanut Butter Cups
  • Black icing
  • Orange chocolate, melted or 1/4 white chocolate, melted mixed with 4 drops red gel food coloring and 8 drops yellow gel food coloring

Instructions

  1. Preheat the oven to 325 degrees.
  2. Line a muffin tin with liners and place a REESE'S Peanut Butter Cup at the bottom of each muffin tin.
  3. In a large bowl, beat the cream cheese, sugar, and peanut butter together until smooth.  Stir in the egg and vanilla until combined. 
  4. Evenly spoon the batter over the peanut butter cups.  
  5. Bake the cheesecakes for 15 minutes or until they are set.  
  6. When done cool the cheesecakes.  If desired top with chopped Peanut Butter Cups.  Refrigerate until ready to serve.  Makes 9 mini cheesecakes.  
  7. To decorate like a basketball either press the Orange REESE'S Pieces into the top of the cheesecake, covering the whole cheesecake and draw lines on with the black icing or dip the top of the cheesecake into the orange colored chocolate and once dry draw the basketball lines on.
