Lemon Strawberry Swirl Bread

This winter the sun has not been shining that much.  I tend to get the blues in the winter and feel more stressed, especially when the sun is not out a lot and I can’t get outside at all.  I wanted to try something more homeopathic and not medicinal to help me get through some of the hard times.  I have heard about essential oils before and was wondering if I should try them when I was contacted by Jenny from The NY Melrose Family about trying Young Living Essential Oils.
The more I looked into Young Living Essential Oils I knew that I wanted to try them and was so excited.  I got my starter kit a few weeks ago and have been using the oils and learning about them.  My favorites right now are Lemon and Stress Away.  I love the way Lemon smells and it has so many great health benefits.  We have been diffusing it around the house.   What made me really excited was when Jenny told me that you can use the essential oils in foods.
 
I got together with some other bloggers to make some great recipes using lemon essential oils.  2-3 drops of lemon essential oil is equal to the zest of 1 lemon.  I decided to make a delicious strawberry and lemon bread.  You can either use the essential oils in this recipe or use lemon zest.
 
This Lemon Strawberry Swirl Bread tasted so fantastic and had a great combination of lemon and strawberry flavor.  The bread is flavored with lemon juice and lemon zest or lemon essential oil.  It also contains strawberries and strawberry jam swirled into the bread.  I though the sweetness of the strawberries tasted great with the more tart flavor of the lemons.
 
I loved the citrus taste in every bite of this bread and it reminded me of the coming spring and warmer weather.  We devoured this bread and I cannot wait to make it again.  I hope you try this delicious bread!

 

 

 
**Note: You can substitute the lemon zest with just 2-3 drops of Young Living Essential Oils Lemon Essential Oil.

Lemon Strawberry Swirl Bread

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • Zest of 1 medium sized lemon OR 2-3 drops Young Living Lemon Essential Oil
  • 1/4 cup lemon juice (the juice from 2 medium sized lemons)
  • 1 cup strawberries, chopped
  • 2 tablespoons strawberry jam

Instructions

  1. Preheat the oven to 350 degrees.
  2. Beat the butter and sugar until they are creamy. Then beat in the eggs and vanilla.
  3. Combine the baking soda and the flour and slowly beat in the flour mixture to the butter mixture.
  4. Then stir in the lemon juice, lemon essential oil or lemon zest, and the strawberries until combined. (You can coat the strawberries in a little bit of flour to stop them from sinking to the bottom)
  5. Pour the mixture into a greased 9x5 pan. Spoon the strawberry jam on top of the batter. Take a knife and swirl the strawberry jam through the batter. Make sure not to over swirl the jam.
  6. Bake for 1 hour to 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Cool for 10-20 minutes in the pan and then remove and continue to cool on a wire cooling rack.
