Carrot Cake White Chocolate Gooey Bars

I cannot believe how fast this year is going.  I am so glad it is spring already.  I am excited to be able to spend time outside and see all the flowers start to grow.  I am also excited that Easter will be here soon.  Since my oldest son is almost 4, he will really understand the Easter egg hunts this year and is really looking forward to it.  I can’t wait to do all the fun Easter traditions with him, like dying eggs and having egg hunts.
When I think of food for Easter, and particularly desserts, carrot cake is the first thing that always comes to my mind.  I am not really sure why, probably because bunnies eat carrots, so then carrots become associated with Easter.  Have you ever wondered what a bunny has to do with Easter?  My husband and I both wondered how a bunny became associated with Easter and why the bunny brings eggs.  I think it is because bunnies and eggs hatching are both things that occur in the spring and Easter is a holiday that happens in the spring.  I decided to make some delicious gooey bars using a boxed carrot cake mix that would be perfect for Easter or really for anytime.
These Carrot Cake White Chocolate Gooey Bars are delicious bars that are really easy to make.  I really loved the combination of the carrot cake and the white chocolate.  The addition of the sweetened condensed milk made the bars really gooey and even more delicious.  These bars are easy to make because they start with a boxed carrot cake mix.  Then you add sweetened condensed milk and white chocolate chips to the batter.  These would be a great treat for Easter or for any occasion.  I hope you try these delicious bars, my family can’t wait to have them again!
Carrot Cake White Chocolate Gooey Bars


  • 1 box (15.25 ounces) Carrot Cake Mix
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 cup sweetened condensed milk
  • 2/3 cup white chocolate chips


  1. Preheat the oven to 350 degrees.
  2. Mix the cake mix, butter, and egg in a large bowl until a thick dough forms.
  3. Line a 8x8 pan with foil and spray the foil well with Cooking Spray. Press about 2/3 of the dough into the bottom of the prepared pan.
  4. Sprinkle the white chocolate chips evenly over the dough. Then pour the sweetened condensed milk on top of the white chocolate.
  5. Roll the remaining dough into 9 equal balls and place the balls evenly on top of the sweetened condensed milk. Press down the dough balls to flatten.
  6. Bake the bars for 25-30 minutes or until they are golden brown on top. Cool the bars completely before serving.  Store the bars in an airtight container
