Strawberry White Chocolate Mousse Cake

One of the first flavors I think about around Valentine’s Day is strawberry.  I love strawberries and it is one of my favorite fruits and I love anything strawberry flavored. One of my favorite types of ice cream is strawberry and I love strawberry cake.  My husband is the same way, so I know that I can never go wrong with anything that is flavored with strawberries.
 
I decided that I wanted to make a cake for Valentine’s Day and knew that a strawberry cake would be perfect. I used a box mix so that this cake would be easy to make.  I decided that I wanted to pair strawberry with chocolate, but decided to go with white chocolate instead of regular chocolate to change things up a bit.  I have been on a big white chocolate kick lately and am really loving pairing white chocolate with all my desserts. I think that white chocolate and strawberries go great together.  This strawberry cake has a white chocolate mousse filling and is topped with a delicious white chocolate ganache.
 
 
This Strawberry White Chocolate Mousse Cake was really delicious and I loved how easy it was to make.  This would be a great cake for Valentine’s Day or would be good for anytime of the year.  I made the strawberry cake using a box mix and made the mousse by combining Cool Whip and white chocolate pudding.  Then I topped it all off with a white chocolate ganache.
 
This cake was delicious.  I loved the taste of the strawberry cake combined with the lightness and airyness of the white chocolate mousse.  Since I made easy mousse using Cool Whip it doesn’t set up as well as regular mousse would.  You should let the cake refrigerate for at least 2 hours to let the mousse set up a little bit. If can cut it earlier, but some of the mousse may come out of the cake.  It still tastes just as good, it just may not look as good.  You could even make this the night before and refrigerate it until ready to serve.  I hope you enjoy this delicious cake.
 

Strawberry White Chocolate Mousse Cake

Ingredients

    For the cake layers:
  • 1 box strawberry cake mix + the ingredients on the back of the box.
  • For the white chocolate mousse layer:
  • 1 box instant white chocolate pudding mix (3.5 oz)
  • 1 cup milk (I used almond milk)
  • 1 tub (8 ounces) Cool Whip, thawed
  • For the topping:
  • 1/2 cup heavy cream
  • 1 cup white chocolate chips
  • Strawberries (optional)

Instructions

  1. Prepare the cake according to the directions on the box.  Follow the directions for making two layers. Allow the two layers to completely cool.
  2. Once the cake is cooled, prepare the white chocolate mousse layer. In a large bowl whisk together the pudding mix and the milk. Immediately whisk in half of the Cool Whip until combined.  Then fold in the remaining Cool Whip
  3. To assemble the cake, lay one layer of the strawberry cake on a plate.  Spread the white chocolate mousse on top of the cake.  Then  place the second layer of strawberry cake on top. Cover and refrigerate for at least two hours.  
  4. For the ganache, place the white chocolate chips into a medium sized bowl. In a small saucepan, pour the cream in and bring it to a boil. As soon as the cream boils up to the top of the pan, quickly remove it from the heat and pour it over the white chocolate chips. Whisk together until combined.
  5. Pour the ganache on top of the cake and make sure that it drizzles down the sides.  If desired top with strawberries.  Refrigerate for a few minutes until the ganache is set.  Keep the cake refrigerated until ready to serve.
