Strawberries and Cream Hand Pies

I cannot believe that it is already February.  This year is going really fast so far.  I mean my baby is already almost 5 months old, which is crazy because it seems like just yesterday that he was born.  At the same time though it feels like he has been part of our lives for a long time.
 My 3 year old said the cutest thing at school yesterday according to his teachers. As part of their unit for Valentine’s Day they went around and had each kid say a reason that they loved their parents.  My son said that he loved his parents because they gave him his baby brother Ashton.  I thought that this was incredibly cute and it really shows that he loves his brother.  We were worried how Aaron would react to not being an only child anymore before Ashton was born. It is so nice to have some validation that he loves his brother.  Also it is always funny to see what kids say to answers to questions like that.
Also it has been nice seeing Aaron trying to play with his brother a little more and they both seem to have fun together.  With Valentine’s Day coming up and my 3 year old having a party at his school, I thought it would be great to make a delicious treat for his parties.  I decided that little hand pies filled with strawberries and white chocolate chips would be a great treat for Valentine’s Day.


These Strawberries and Cream Hand Pies were so delicious.  I loved that in each bite you get strawberry pie filling mixed with melted white chocolate and buttery flaky pie crust on the top and bottom.  It really doesn’t get much better than this.  Plus I love that they are in bite sized hand pies so that I don’t have to feel as guilty as if I ate a whole slice of pie.  Even though that doesn’t stop me from eating multiple hand pies.
These little hand pies are decorated with coarse sugar or sugar in the raw on the top and drizzled with melted white chocolate.  I think these look so cute and are the perfect snack or dessert for Valentine’s Day.  Really though, I would eat these any time of the year and I like that I don’t have to make a whole pie.  My whole family devoured these and I can’t wait to make them again! I hope you enjoy them!



Strawberries and Cream Hand Pies


  • 1 package refrigerated pie crusts (2 crusts per box), thawed per the directions on the box
  • 2-3 tablespoons strawberry pie filling
  • 2-3 tablespoons white chocolate chips
  • 1 egg
  • 1 tablespoon water
  • Coarse sugar or sugar in the raw (for sprinkling on top of the hand pies)
  • 1/4 cup white chocolate chips, melted (optional drizzle)


  1. Preheat the oven to 350 degrees.
  2. Unroll the crusts and cut out circles using a cookie cutter or cup to get the size that you want.  (I used a cup to get the size circles that I wanted).  I was able to get 9 circles per crust.
  3. Place half of the circles on a cookie sheet lined with parchment paper.
  4. Place 1 teaspoon of strawberry pie filling in the center of each circle on the cookie sheet. Make sure the pie filling does not spread all the way to the edges. This might not look like a lot, but if you put too much more the filling will explode out during baking.  Then place 1 teaspoon of white chocolate chips on top of the strawberry pie filling.
  5. Whisk the egg and water together until combined to form the egg wash.  Brush the inside edges of the circles with the egg wash.  Then place the remaining circles on top of the pies.  Use a fork to crimp and seal the edges of the pies.
  6. Brush the top of the pies with the egg wash.  Then sprinkle the sugar on top of the pie crusts.
  7. Bake for 13-15 minutes or until golden brown.
  8. Allow the pies to cool for about 5 minutes then drizzle the melted white chocolate on top of the pies.  This recipe makes about 9 hand pies.
