Samoa Caramel Cheesecake Parfaits

It’s that time of year . . . Girl Scout cookie time! I was so excited last weekend when I saw Girl Scouts out around town selling cookies, I had to stop and get some.  I then immediately went home and decided to make something with my Girl Scout cookies.  Every year I love thinking up different recipes to make with Girl Scout cookies.  The great thing is that there are some copycat recipes for Girl Scout cookies and some brands sell similar cookies so you can make these year round even when the originals are not available.
I decided to start by making a recipe using Samoas.  Samoas are one of my favorite Girl Scout cookies and were always a favorite around my house growing up.   Since both my sister and I were in Girl Scouts, my mom would order a lot of cookies.  When I was about in middle school, I started taking some of the money I earned babysitting and buying my own stash of cookies that way nobody would steal them.  I would always make sure to buy lots of Samoas.  I decided to pair the delicious Samoa cookies with no bake caramel cheesecake in a parfait topped with whipped cream.
These No Bake Samoa Caramel Cheesecake Parfaits tasted amazing.  I loved the combination of the Samoa cookies with the caramel cheesecake and it all tasted great in a parfait with whipped cream on the top.  I loved how easy these were to make.   All you have to do is crush the Samoas and make the cheesecake, which can be mixed up in a matter of minutes.
 I decided to put these in mason jars but you  can make them in any container.  They make 2 larger parfaits (like the jars I put them in) or 4 smaller parfaits. The parfaits contain layers of crushed Samoa cookies, no bake caramel cheesecake, and then a layer of whipped cream on top.  I then garnished it with a Samoa cookie.  The caramel cheesecake tastes great with the crushed Samoa cookies and they both go fantastic with the whipped cream. These were so delicious and I can’t wait to make them again!

Samoa Caramel Cheesecake Parfaits


  • 1 box Samoas cookies (or similar store bought or homemade cookie)
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1/4 cup caramel ice cream topping
  • 1 container (8 ounces) Cool Whip


  1. In a food processor or a plastic bag, crush 10 of the Samoa cookies.
  2. In a medium-sized bowl, beat together the cream cheese and sugar until combined.   Then beat in the caramel sauce.   Then gently stir in 1/2 of the container of Cool Whip.
  3. Place a layer of the crushed Samoas in 2 mason jars or parfait glasses or in 4 smaller cups.   Then place a layer of the caramel cheesecake on top of the crushed Samoas.  Repeat with another layer of crushed Samoas and another layer of caramel cheesecake. Top the parfaits with the remaining Cool Whip and garnish with one of the remaining Samoa cookies.
