Skinny Chocolate Cherry Coke Poke Cake

With the new year, I have been trying to eat a little bit healthier.  When I eat healthier, I usually like to treat myself to some dessert and unhealthy foods. Otherwise if I crave something and don’t allow myself to eat it, I will break and binge eat, which usually ends up being even worse than just allowing myself to have treats.  I am not on a diet per se, I just am trying to be a little bit healthier, but I am still allowing myself to have foods I want, just in moderation.  It is great when I can have make a dessert that I want a little bit healthier, so that I can eat it without all the consequences of the regular version.
One of the desserts that I usually crave the most is chocolate cake.  I don’t know why, but when I am trying to be good and want sweets, it’s usually chocolate cake that I crave. I didn’t even like chocolate cake that much when I was younger.  I would always go for the white or yellow cake.  When I got older, I for some reason changed and I am now a big fan of chocolate cake.  Let’s get real for a moment though, I think I’m probably a fan of any piece of cake, I just like chocolate a little bit better.
A few months ago, I saw that you can make a normal cake mix healthier by just adding diet soda into the mix, instead of the oil and eggs.  I knew that I had to try it and I thought it would go great with one of my favorite type of cakes, a poke cake.  I decided to make a chocolate poke cake mixed with Coke Zero and poured cherry jello into the cake and topped it all with fat free whipped cream.
This Skinny Chocolate Cherry Coke Poke Cake tasted fantastic and was so moist, without all the guilt and calories associated with a regular piece of poke cake.  I really loved the taste of the chocolate with the tastes of Coca-Cola and Cherry.  They all went great together in this cake and tasted great with the whipped cream as well.  I used Coke Zero because I like the taste better but you can also use Diet Coke as well.
While I am not claiming that this cake is healthy, it is a more healthy version of a regular poke cake and lets you have dessert without all the guilt associated with a regular piece of cake.  I really loved this cake and thought it tasted just as good a regular cake. I can’t wait to have it again!



Skinny Chocolate Cherry Coke Poke Cake


  • 1 box (15.25 ounces) chocolate cake mix
  • 1 can (12 ounces) Coke Zero or Diet Coke (or 1 1/2 cups of Coke Zero or Diet Coke)
  • 1 box (3 ounces) Cherry Jello
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 ounces) fat-free whipped topping


  1. Preheat the oven to 350 degrees.
  2. Mix the chocolate cake mix and the Coke Zero together. Do not add the other ingredients listed on the back of the cake box. Bake the cake for the time listed on the back of the box.
  3. Once the cake is completely cooled, use a wooden spoon to poke holes evenly throughout the cake, making about 25-30 holes.
  4. Mix together the Jello and the boiling water and stir for 2 minutes or until the Jello powder is completely dissolved.  Add in the cold water and stir.  
  5. Immediately pour the Jello evenly over the cake, trying to fill up the holes.
  6. Then spread the whipped topping on top of the cake.
  7. Refrigerate for at least 4 hours or overnight. This makes about 12 large pieces.

    • Sugar free Jello would make it a little healthier. I couldn’t find it in my grocery store, so I just used regular Jello. So a box of either would be fine.
