Crock Pot Chicken Gnocchi Soup

There is nothing more comforting in the winter than a big bowl of soup.  It has been really cold here for the past few weeks and it has snowed a few times.  This is the perfect weather for soup.  I love to eat food that can warm me up when it is cold outside.  However, I don’t have a lot of time to spend making soup. With working, a husband, and two kids, I need something easy that I can get on the table quickly.
During the winter we usually like to make a big pot of soup on the weekends so that we have some leftover for during the week.  I love to make soups in the crock pot because they are so easy.  All you have to do is put most of the ingredients in, let it cook for awhile and then add the rest of the ingredients about a half hour before you are done.  Then dinner is ready, it can’t get any easier than that.
I decided to take one of my favorite soups, Chicken Noodle Soup and make it with gnocchi instead of noodles.  If you never had gnocchi before, it is delicious. It is like a cross between pasta and potatoes.  They are little balls of potatoes covered in dough.  To make the soup easier, I decided to make it in the crock pot.
This Crock Pot Chicken Gnocchi Soup tasted delicious and was so easy to make.  This is the ultimate comfort food.  I really loved the substitution of the noddles for gnocchi.  It was like having potatoes and pasta in the soup and it made it easier to eat than noodles as well.  My whole family loved the soup and it made a good bit, so we had leftovers.
I loved the fact that it was easy to make.  All I had to do was add ingredients to a crock pot, let it cook for awhile, then add in the gnocchi, and dinner is ready.  It really couldn’t get much easier than this and it’s homemade so that makes it even better.  We will definitely be making this soup again!
