Asian Chicken Bok Choy Salad

Happy New Year!  With the beginning of a new year I like to try to start eating healthier.  Now that the holidays are over, I need a new start to eating healthy, which is perfect for the beginning of the year.  While I like to indulge sometimes, I need to make sure that my family and I are eating healthier meals. I also want to make sure that we are getting enough vegetables.  One thing that I definitely want to incorporate into our lunches and dinners is salads.
 
I was so happy when I discovered Eat Smart Salad Kits and Stir Fry Kits.  Each kit is packed with five to seven beneficial superfoods, which means that they are a great way to eat your veggies every day. I love that these salad and stir fry kits can be easily turned into a healthy meal for my family.
 
Eat Smart makes a variety of salad and stir fry kits, which you can find in the produce section of your local grocery store. My husband tried the Sweet Kale salad kit and the Wild Greens and Quinoa Salad for his lunches at work.  This was a convenient way to have a healthy lunch.  He said that they were both really good.  We made a dinner out of the Shanghai Blend Stir Fry  by cooking it with soba noodles and Asian marinated chicken, it was delicious!  I can’t wait to try the Kale and Red Chard stir fry kit.  Click here for a store near you that carries these fantastic Eat Smart salad and stir-fry kits.
 
 
We also decided to make a healthy dinner by combining the Eat Smart Ginger Bok Choy Salad Kit with Asian marinated chicken.  This salad kit offers six superfoods, including sugar snap peas, carrots, Napa cabbage, broccoli, bok choy, and red cabbage.  It also comes with peanuts and a ginger sesame chicken dressing.  This salad kit is not only convenient, it is also healthy and nutritious.  
 
 
This Asian Chicken Bok Choy Salad tasted fantastic and was a great meal.  I really love how the Asian marinated chicken complimented the Eat Smart Ginger Bok Choy Salad.  This was so easy to make and I really liked that the salad kit contained the peanut topping and the dressing with it.  
 
I marinated the chicken overnight so it was ready for dinner for the next day.  However, it only needs to marinate for an hour.  Then I cooked the chicken in a skillet and then the salad was ready to assemble.  Once the chicken was marinated, this only takes about 10 minutes to cook and assemble. 
 
 I really love that I can put a delicious and healthy dinner on the table for my family so quickly.  This chicken was great in the salad and also tasted great when we made it with the stir fry kit as well.  The great thing about the chicken is that it makes a good bit so you can make it all and then refrigerate it and use it in other salads.  My family loved the salad and I will definitely be making this easy and healthy salad again.  
 
 

Asian Chicken Bok Choy Salad

Ingredients

  • 1 bag (12 ounces) Eat Smart Ginger Bok Choy Salad Kit
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup soy sauce
  • 1/4 cup dark brown sugar
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 2 tablespoons minced garlic

Instructions

  1. In a small bowl combine the soy sauce, dark brown sugar, honey, garlic powder, and minced garlic.
  2. Place the chicken and the marinade in a ziploc bag.  Make sure the chicken is coated. Marinate in the refrigerator for at least an hour.  
  3. When ready to cook the chicken, place in a medium sized skillet and cook the chicken over medium heat it is fully cooked.  
  4. Cut the chicken into strips and place on top of the Ginger Bok Choy Salad on a large plate or bowl. Then sprinkle the peanuts on top and drizzle with the Ginger Sesame dressing.
