Peppermint Chip Oatmeal Cookies with Rolled Oats

These Peppermint Chip Oatmeal Cookies made with Rolled Oats are a great cookie for the holidays.  They are oatmeal cookies stuffed with peppermint chips.
One of my favorite things to do around the holidays is baking.  I always remember making cookies with my mom when I was younger.  We would make a few different types of cookies, but we would always make cookies that she would allow us to decorate with sprinkles.  I remember having so much fun decorating those cookies.  Now as an adult I love to make all different types of cookies and especially like making cookies to give as gifts.
One of my favorite types of cookies are oatmeal raisin cookies.  I really like how much texture and flavor the oats give to cookies.  As I was planning which cookies I was going to make for the holidays, I knew I had to make some type of oatmeal cookie.  I decided to combine one of my favorite seasonal flavors, peppermint, with oatmeal cookies, instead of doing the traditional oatmeal raisin cookies.
I needed the ingredients to make my oatmeal cookies, so I headed to Target to pick up everything that I needed.  I headed to the hot cereal section to grab Quaker Oats Old Fashioned Oats to use in my oatmeal cookies. Quaker Oats has a Limited Edition Winter Canister (42 ounces) available at Target for a limited time only .  I thought the limited edition canister was really pretty, so I decided to pick one up.  I then picked up the rest of the ingredients for my cookies at Target.
These Peppermint Chip Oatmeal Cookies were delicious and I really love the combination of the oatmeal cookie with the peppermint.  I made my oatmeal cookies using Quaker Oats Old Fashioned Rolled Oats as that is what I always use to make my oatmeal cookies.  These are perfect for the holidays and make a great cookie.  The taste of peppermint in each bite is great for the holidays.  I thought that these oatmeal cookies were excellent and will be a great addition to my holiday baking.

Peppermint Chip Oatmeal Cookies with Rolled Oats


  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1 cup flour
  • 1 1/2 cups Quaker Oats Old Fashioned Rolled Oats
  • 3/4 cup peppermint baking chips


  1. Preheat the oven to 350 degrees.
  2. In a large bowl, cream the butter, sugar, and brown sugar together. 
  3. Beat in the eggs and vanilla until combined.
  4. In a small bowl combine the flour and baking soda. Slowly add this mixture to the wet ingredients until all ingredients are well incorporated. 
  5. Stir in the old fashioned rolled oats and peppermint baking chips until they are all mixed into the dough.
  6. Roll the dough into rounded teaspoonfuls and place on an ungreased cookie sheet. Bake for 9-11 minutes or until the cookies are golden brown. Cool the cookies for 1 minute on the cookie sheet then remove to a wire cooling rack.  Store in an airtight container.  
  7. Makes about 1.5-2 dozen cookies.
