Mint Chocolate Chip Eggnog Float

One of my favorite drinks during the holidays is eggnog.  However, once I became lactose intolerant I couldn’t have eggnog anymore.  I was so excited when I was at the store a couple of weeks ago and saw that they make dairy-free eggnog.  I picked up some and knew I had to make something with it.
 
During the fall I made an Apple Cider Float that became one of my most popular posts. I decided that it would be fun to pair the eggnog with ice cream and make a float that would be great during the holiday time.  Even though it is cold outside, I think that ice cream is great anytime of year.  I decided to pair up the eggnog with one of my favorite flavors of ice cream, mint chocolate chip, to create a mint flavored eggnog float that would be perfect during the holidays.
 
 
This Mint Chocolate Chip Eggnog Float was fantastic and was a great ice cream treat.  I really loved the flavor of the mint chocolate chip ice cream and the eggnog together.  I thought that they went well together and made the drink perfect for the holidays.  You could even add some rum into this if you wanted to make it an alcoholic drink.  I added some Andes mints as a topping.
 
My 3 year old loved this as well.  Since he also cannot have dairy, he had never had eggnog before.  He loved the eggnog with the ice cream.  I love that these can be made dairy free using dairy free eggnog and ice cream, but they can also be made with regular eggnog and ice cream as well.  The best part is that the drink is so delicious, but that it can be made super easily and quickly.  This is a great treat and I hope that you enjoy it!

 

Mint Chocolate Chip Eggnog Float

Ingredients

  • Eggnog (can use dairy free eggnog)
  • Mint Chocolate Chip Ice Cream (can also use dairy free ice cream)
  • Andes Mints, crushed (optional topping)

Instructions

  1. In a glass add two scoops of mint chocolate chip ice cream.
  2. Pour in the eggnog until the ice cream is covered. Then add another scoop of ice cream on top.
  3. If desired, sprinkle some Andes Mints on top.
  4. Serve cold with a spoon or straw.
