Chocolate Pretzel Peanut Butter Pudding Cookies

One of the things I look most forward to around the holidays is making cookies.  I love giving cookies away to people and having them around the house.  Cookies are one of my favorite desserts because there are so many variations and they are so versatile.  My favorite type of cookies to make are pudding cookies.  The pudding added to the cookie makes it so moist.  These are especially great for gift giving because they stay moist for days after they are made.  That way you can make them a few days before you give them as gifts.  I always make pudding cookies when I am mailing cookies to people as well.
 
I decided to add one of my favorite flavor combinations to a pudding cookie, chocolate and peanut butter.  I made a peanut butter pudding cookie and added mini chocolate covered pretzels to the cookie to give it a great chocolate and salty flavor.
 
 
These Chocolate Pretzel Peanut Butter Pudding Cookies are really delicious.  I love adding the pudding to the cookie as it gives it good flavor and makes the cookie so moist.  The mini chocolate covered pretzels taste fantastic with the peanut butter cookie and add a slightly salty flavor from the pretzel.  There are about two mini chocolate covered pretzels in each pretzel.  I then drizzled some melted chocolate on top.  These cookies tasted great, I hope you enjoy them!
 

 

Chocolate Pretzel Peanut Butter Pudding Cookies

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup peanut butter
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 box (3.4 ounces) instant vanilla pudding, dry
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 1/4 cups flour
  • 1 cup miniature chocolate covered pretzels
  • 1/4 cup semi-sweet chocolate chips, melted (for optional drizzling)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, cream the butter, peanut butter, sugar, and brown sugar together. Add the vanilla pudding mix and beat until incorporated.
  3. Beat in the eggs and vanilla until combined.
  4. In a small bowl combine the flour and baking soda. Slowly add this mixture to the wet ingredients until all ingredients are well incorporated.
  5. Stir in the chocolate covered pretzels until they are all mixed into the dough.
  6. Roll the dough and place on an ungreased cookie sheet. There should be about 2 chocolate covered pretzels in each cookie, make sure to cover the chocolate covered pretzels with dough.  Bake for 8-10 minutes or until the cookies are golden brown. Store the cookies in an airtight container.  This makes about 2 dozen cookies.  If desired, drizzle the melted chocolate on top of the cookies.
