Monster Cookie Dough Brownies

“The Eggland’s Best information, coupons, and gift cards have been provided by Eggland’s Best.”
One of my favorite things to do around the holidays is bake. I  love to bake for family gatherings, for presents, and to have sweet treats around the house.   My husband doesn’t like a lot of the traditional holiday desserts, like pumpkin pie, apple pie, or cheesecake. Brownies are his favorite things to have for a holiday dessert.  I decided to bake him some delicious brownies that would be great for the holidays.  He also loves cookie dough so I combined cookie dough with brownies to get a delicious dessert.
While it is hard to be healthy around the holidays, especially with the delicious baking, Eggland’s Best eggs allow you to sneak in some necessary vitamins into your holiday treats.  Eggland’s Best eggs are superior in nutrition, taste and freshness.   By choosing Eggland’s Best eggs over ordinary eggs, you are getting an egg that is fresher, tastes better and contains more vitamins and nutrients. Compared to ordinary eggs, Eggland’s Best eggs have: Four times more vitamin D, More than double the omega-3s, Ten times more vitamin E, and 25% less saturated fat.  I love all the extra nutrition included in Eggland’s Best eggs and I feel they taste better too.  I used Eggland’s Best eggs to make my brownies.
These Monster Cookie Dough Brownies are so delicious and are a great treat for the holidays or for anytime.  These combine delicious and fudgy brownies made using Eggland’s Best eggs, with Monster Cookie Dough dip on top.  Have you ever had a Monster Cookie?  They combine the best of a bunch of different kinds of cookies: chocolate chip, peanut butter, M&M, and oatmeal.  Because the holidays are a great time for baking cookies, these brownies are the perfect holiday dessert since they combine cookie dough and brownies.
My husband and I loved these brownies.  He brought them into work with him and they were devoured.  I loved the combination of the Monster Cookie Dough with the brownies.  The Monster Cookie Dough tasted great too with the peanut butter, oats, chocolate chips, and M&M’s. I also loved that I could sneak in some vitamins into the brownies by using Eggland’s Best eggs.   These brownies were a delicious treat and would be a great addition to any holiday table, would make a great gift during the holidays, or would be great for anytime.

Monster Cookie Dough Brownies

Brownies (or use your favorite brownie recipe)
  • 1 box (18.3 ounces) 13x9 Size Fudge brownies
  • 1/4 cup water
  • 2/3 cup vegetable oil
  • 2 Eggland's Best eggs
  • Monster Cookie Dough
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 1 1/2 cups powdered sugar
  • 3 tablespoons brown sugar
  • 3 tablespoons flour
  • 1 teaspoon vanilla
  • 2 cups oats (I used old fashioned oats)
  • 1 cup semi-sweet chocolate chips
  • 1 bag (8 ounces) M&M's (about 1 cup)

  1. Preheat the oven to 350 degrees.
  2. Stir the brownie mix, water, oil, and 2 eggs together in a medium sized bowl until combined.
  3. Pour the brownie batter into a greased 13x9 inch pan.
  4. Bake the brownies for 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Meanwhile, in a large bowl, beat the cream cheese, butter, and peanut butter until smooth.
  6. Mix in the powdered sugar, brown sugar, flour, and vanilla.
  7. Then gently stir in the oats, chocolate chips, and M&M's.
  8. Refrigerate the dough for about 30 minutes.
  9. Once the brownies are completely cooled and the dough is chilled, evenly spread the cookie dough on top of the brownies. Press the dough down gently to adhere to the brownies. Refrigerate for an hour before cutting. Cut into small pieces to serve. Store in the refrigerator. Makes about 24 small brownies.
