Latin Veracruz Salmon and Rice Skillet

This Latin Veracruz Salmon and Rice Skillet is an easy dinner made using Imagine® Organic Culinary Simmer Sauces.
 
Last week I posted a recipe for Jambalaya Pasta using the Imagine® Organic Culinary Simmer Sauces flavor Louisiana Creole.  I really loved how easy the meal is, which is important to me.  The quicker I can get dinner on the table, the better.  I work all day and then have two young kids to deal with when I come home.  My 3 year old usually throws some sort of tantrum that he wants dinner immediately, so the quicker it takes, the sooner he calms down and we can all enjoy our meal.  However, while I love easy and quick dinners, I don’t want to sacrifice taste or quality.

Since I really liked how quickly I could get dinner on the table with Imagine® Organic Culinary Simmer Sauces, without sacrificing quality or taste, I decided to try another flavor.  The sauces come in 4 great flavors: Portobello Red Wine, Latin Veracruz, Thai Coconut Curry, and Louisiana Creole.  To use the sauces you just sear your favorite meat, add in any additional ingredients, simmer with the simmer sauce, and the result is an easy and quick dinner that your family will love.  My son has been really into Latin food lately and my husband loves it, so I decided to create a delicious meal using the Latin Veracruz Imagine Simmer Sauce.  The simmer sauce was really good and I thought that it had a similar taste to salsa.  I thought that this flavor would go great with fish and I decided to use my favorite fish, salmon.  I added rice to create a one pan meal that is an easy dinner.

This Latin Veracruz Salmon and Rice Skillet was really good and had great flavor.  I loved how easy it was to get dinner on the table and the best thing about a one pan meal is that it means less clean up. The great thing about the Imagine® Culinary Simmer Sauces is that the sauce is already made for you, so I can have dinner without the work.  All you have to do is add the salmon to the pan with the simmer sauce and then add rice, cilanto, lime juice, and avocado and you have a gourmet meal
without all the hassle.
 
I used cooked rice to make this meal even easier, but you can also cook the rice in the simmer sauce, but it will take a little longer.  I also added avocado at the very end to heat it up a little but, but you can feel free to just use the cold avocado.  I thought the flavor in this was great and the rice reminded me of Mexican rice.  I love that I can have a great meal on the table in just minutes.  We can’t wait to make this delicious dish again.

Latin Veracruz Salmon and Rice Skillet

Ingredients

  • Latin Veracruz Imagine® Culinary Simmer Sauce
  • 1 tablespoon olive oil
  • 1 pound salmon filets
  • 1 cup cooked rice (I used basmati rice)
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1/2 medium sized lime (about 1 tablespoon lime juice)
  • 1 medium avocado, cubed

Instructions

  1. Heat the oil in a large skillet over medium-high heat until hot.
  2. Sear the salmon for 3 minutes (about 1 1/2 minutes on each side) until it is lightly browned.
  3. Reduce to medium heat. Pour in the simmer sauce and stir gently. Allow to simmer until the salmon is fully cooked.
  4. Add in the cooked rice and stir until combined. Then add in the cilantro, lime juice, and avocado. Continue to simmer for a couple of minutes or until heated through. You can also just use cold avocado instead of heating it up.
