Chicken Bacon Ranch Tomato Bites

I am so excited about the start of football season this week. My husband and I both like to watch football and we get really into it.  I like to watch some other sports, but football is definitely my favorite.  We always like to make a bunch of different snacks for the games and have fun hoping that our fantasy football team does well.
My husband is a big Philadelphia Eagles fan and this year we were able to get season tickets for the game.  Since our baby is due in a matter of weeks we have sold most of our tickets for this season, but plan on going to the first game.  We are both really excited because we have never been to a regular season NFL game before.  We are also excited for the first game of the season at home.  Our seats are not very good, but we are just glad to be there for the experience.  Since I will be 37 weeks pregnant, I just hope the baby waits to make his appearance until after the game.
I decided to make some great appetizers that would be perfect for watching football or for any party.  These Chicken Bacon Ranch Tomato Bites are a great appetizer.  They combine the delicious flavors of chicken, bacon, and ranch stuffed inside a tomato.  I used two different sizes of tomatoes, grape tomatoes and campari tomatoes.  The campari tomatoes are the ones shown in most of the pictures.  They were a little bigger than bite size, but were much easier to scoop out than the grape tomatoes.  A picture of the grape tomatoes is shown below.  Either tomato would work fine.  I hope everyone enjoys the start of football season and that they enjoy this delicious appetizer!

Chicken Bacon Ranch Tomato Bites

Chicken Bacon Ranch Tomato Bites

  • 24-30 cherry tomatoes or about 8-12 campari tomatoes
  • 1/2 cup mayonnaise
  • 2 tablespoons bacon bits
  • 1 tablespoon ranch dressing seasoning powder, dry
  • 1/2 tablespoon Parmesan cheese, grated
  • 1/4 cup chicken, chopped
  • 1 teaspoon parsley

  1. Slice off the tops of the tomatoes. Use a small spoon or knife to scoop out the pulp and discard. Slightly cut the bottom of the tomato so that it can stand upright.
  2. Combine the mayonnaise, bacon, ranch seasoning, cheese, chicken, and parsley in a medium sized bowl until combined.
  3. Spoon the bacon chicken ranch mixture into the tomatoes. Refrigerate until ready to serve.

  1. Mmm, these look so good,…and pretty! Pinning :)
