Both of our parents always grow zucchini in their gardens. So come August, I know we are always going to get a bunch of zucchini from them. The other week my in-laws gave us a giant zucchini from their garden and we had to decide what we wanted to do with it. We grilled some of the zucchini but we weren’t sure what we wanted to make with the rest of the zucchini.
I knew I wanted to make a side dish. When I saw some orzo on Pinterest, I realized I had never tried making orzo before and knew what to pair with the zucchini. I thought the orzo and zucchini would taste great together with some Parmesan cheese. The orzo would make a great side dish that would be great with any meal and would be a great way to use the zucchini.
This Zucchini Parmesan Orzo was a fantastic side dish. I cooked the orzo in chicken broth to give it some more flavor and added sauteed zucchini and Parmesan cheese to give it great flavor. We all loved the orzo and it made a lot. It even tasted fantastic left over. This is a great way to use any zucchini from your garden. I hope you try this delicious orzo pasta, we can’t wait to make it again!
