Zucchini Parmesan Orzo

Both of our parents always grow zucchini in their gardens.  So come August, I know we are always going to get a bunch of zucchini from them.  The other week my in-laws gave us a giant zucchini from their garden and we had to decide what we wanted to do with it.  We grilled some of the zucchini but we weren’t sure what we wanted to make with the rest of the zucchini.
I knew I wanted to make a side dish.  When I saw some orzo on Pinterest, I realized I had never tried making orzo before and knew what to pair with the zucchini.  I thought the orzo and zucchini would taste great together with some Parmesan cheese.  The orzo would make a great side dish that would be great with any meal and would be a great way to use the zucchini.
This Zucchini Parmesan Orzo was a fantastic side dish. I cooked the orzo in chicken broth to give it some more flavor and added sauteed zucchini and Parmesan cheese to give it great flavor.  We all loved the orzo and it made a lot.  It even tasted fantastic left over.  This is a great way to use any zucchini from your garden.  I hope you try this delicious orzo pasta, we can’t wait to make it again!



Zucchini Parmesan Orzo

Zucchini Parmesan Orzo


  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 1 container (32 ounces) chicken broth or stock
  • 2 cups orzo
  • 2 1/2 cups zucchini, chopped
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup Parmesan cheese, shredded or 1/2 cup store bought grated Parmesan cheese


  1. In a medium pot add the olive oil and garlic and saute for 2-3 minutes. Then add the broth to the pan and bring to a boil.
  2. Stir in the orzo and bring back to a boil. Once boiling cover and simmer for 15 minutes, stirring occasionally, or until the liquid is absorbed and the orzo is tender.
  3. Meanwhile spray a large skillet with cooking spray and heat over medium-high heat. Add the zucchini, Italian seasoning, salt, and pepper. Cook for 5 minutes or until the zucchini is lightly browned, stirring occasionally.
  4. Once the orzo is done, stir in the zucchini and the Parmesan cheese until melted.
