Since it is August, it is the perfect time for melons, specifically honey dew melon and cantaloupe. As I have said before, these are my husbands favorite fruits and we always like to buy them when they are in season. My grocery store sells them year round, but I always think that they taste the best when they are in season and are fresh.
I decided to make a great summer dessert using honey dew and cantaloupe. One of my favorite summer desserts is strawberry shortcake. I love the taste of the strawberries with the pound cake and whipped cream. I decided to combine melons with pound cake and whip cream to create a melon shortcake. I added some white chocolate chips and made it in a parfait or trifle form.
These Melon White Chocolate Shortcake Parfaits were fantastic and were a great summer treat. I really loved the combination of the honey dew melon and cantaloupe with the pound cake, whipped cream, and white chocolate chips. They all tasted great together. I made two bigger parfaits, but these can be made into 4 smaller parfaits as well. I also used fat free whipped cream to make it a little healthier, but feel free to use any kind that you want. These are the perfect end of summer treat and I hope that you enjoy them!
