Red, White, and Blue Sandwich Cookies

I cannot believe that it is already the second week of June and that the 4th of July is almost here.  My husband is a teacher and his last day with the students is today.  I feel that this year has gone so fast and that summer will fly by.  It is crazy that my son will be turning 3 in a few weeks and that we will have a second son in September.
We are not ready at all for the second baby.  I know with our first we had his whole nursery ready a few months beforehand.  Our second son’s bedroom is now used as storage so we will first have to move everything out of the room then decorate it and get furniture.  So in that regard I hope the summer goes slow so that we are able to get everything ready for the baby.  Since the 4th of July will be here before I know it and it will soon be time to start planning for 4th of July celebrations, I made some really easy sandwich cookies that would be great for the 4th.
These Red, White, and Blue Sandwich Cookies are easy to make and taste fantastic. I love the colors and think they would be so festive for any patriotic themed party.  The cookies themselves are made using red velvet and blue velvet cake mixes.  I then used pre-made frosting to combine them together.  This is really an easy and delicious treat that looks like it takes a lot of time to make but can made easily for any celebration. Red, White, and Blue Sandwich Cookies


  • 1 box Red Velvet cake mix
  • 1 box Blue Velvet cake mix
  • 2/3 cup vegetable oil
  • 4 eggs
  • 1 container Vanilla Frosting


  1. Preheat the oven to 325 degrees.
  2. In a large bowl, stir the blue velvet cake mix, 1/3 cup vegetable oil, and 2 eggs with a spoon until dough forms.  
  3. In another large bowl, stir the red velvet cake mix, 1/3 cup vegetable oil, and 2 eggs with a spoon until dough forms.  
  4. Separately roll the blue and red dough into rounded teaspoonfuls and place on an ungreased cookie sheet. Bake for 9-11 minutes or until the cookies are set.
  5. Spread frosting on the back of one cookie and place the back of a cookie of the other color on top of the frosting to create a sandwich.


The red velvet cookies come out a little bit bigger than the blue velvet cookies, so I suggest making the dough balls for the blue velvet cookies a little bit bigger so both colors are equal in size.
