With Cinco de Mayo on Monday, I thought I would make a version of a Mexican dish for dinner. While I like Mexican food, I do not like anything that is too spicy, so I always like to take the idea of the Mexican dish, like taquitos, and combine it with some of my favorite flavors. I have made Bacon Chicken Ranch Taquitos and Buffalo Chicken Taquitos in the past.
I decided to make another version of taquitos and combine it with one of my favorite dips, spinach and artichoke dip to create Spinach and Artichoke Taquitos.
These Spinach and Artichoke Taquitos were so delicious and the spinach and artichoke combination inside the taquito was very cheesy and creamy. This was very similar to spinach and artichoke dip wrapped up in something to dip it in. The spinach and artichoke flavor went great with the taquitos. This would make a great appetizer or would be great for dinner. We all enjoyed it and cannot wait to have them again.
