Lemon Strawberry Cheesecake

I have another delicious lemon recipe for you today.  Like I said in my last post for Blueberry Lemon Pudding Cookies, lemon , for some reason, reminds me of spring.  Another fruit that reminds me of spring and summer is strawberries.  I decided to combine the two flavors into a decadent and delicious cheesecake.

I do not make cheesecake a lot because my husband does not like it.  He does not mind things I make that are similar to cheesecake that are not baked, but once it goes into the oven, he just does not like it.  However, everyone else in both of our families loves cheesecake, so I make it any chance I get for family get together.  We had a celebration for my mother-in-law’s birthday two weeks ago and I decided to make her a delicious cheesecake with her favorite flavor, lemon.
This Lemon Strawberry Cheesecake is fantastic. It was honestly the best cheesecake I have ever had and my mother-in-law agreed.  I really liked that it was not as sweet as cheesecake normally is due to the use of the lemon zest and lemon juice.  Also the lemon flavor went fantastically with the strawberry topping.  The tartness of the lemon cut perfectly through the sweetness of the strawberries on top, leading to the perfect combination of tart and sweet.  This cheesecake was devoured and I ended up making it again the next weekend to take to dinner at my parent’s house, where it was again devoured.  Trust me, this cheesecake is worth making and you will not be disappointed!

**Note: You can substitute the lemon zest with just 2-3 drops of Young Living Essential Oils Lemon Essential Oil.

Lemon Strawberry Cheesecake

Lemon Strawberry Cheesecake


  • 9 Graham Crackers, crushed
  • 1/4 cup butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • Zest of 1 medium sized lemon OR 2-3 drops Young Living Lemon Essential Oil
  • 1/4 cup lemon juice (the juice from 2 medium sized lemons)
  • 1 can (21 ounces) strawberry pie filling


  1. Preheat the oven to 325 degrees.
  2. Take the crushed graham crackers and mix with the melted butter. Press the crust into the bottom of a 9 inch spring form pan lined with parchment paper or tin foil.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Then beat in the eggs and the vanilla.Gently beat in the lemon zest and the lemon juice.
  4. Pour the batter into the spring form pan on top of the crust. Bake the cheesecake for 1 hour to 1 hour 10 minutes or until a knife inserted in the center comes out clean. Remove the cheesecake from the oven and allow to completely cool. When done cooling, add the strawberry pie filling on top of the cheesecake. Refrigerate until ready to serve.
