Blueberry Lemon Pudding Cookies

Lemon is one of those flavors that reminds me of spring.  I am not sure why but it does.  I have been making some lemon treats lately because I need it to feel more like spring. It has been a long winter and I feel like it is never ending.  Last weekend it finally got into the 60’s and was beautiful for one day and then today it is back down in the 20’s and there is snow on the ground.  I live in southern Pennsylvania and while we usually get snow, this is pretty late for us to be getting snow.  I wish spring would just get here already.
Spring is one of my favorite seasons, with all the flowers blooming and the weather that is not too hot yet.  So anything that makes me think of spring, like lemon, is a good thing.  I have been seeing lemon things all around Pinterest and especially the combination of lemon and blueberry.  I had never combined lemon and blueberry before in cooking, so I decided to make some cookies and try it out.
These Blueberry Lemon Pudding Cookies are so delicious.  Like any pudding cookie they are also really moist.  The lemon flavor comes from the lemon pudding that I used and then I added in blueberries to the cookies.  I really loved the tartness of the lemon flavor combined with the sweetness of the blueberries, it was really good.
My husband brought some of the cookies into his class to share with his students.  His students loved the cookies.  One of them even said that if he had to marry a cookie, it would be this one.  I thought that was a pretty funny comment, but it helps to show just how good these cookies are.  Make these delicious and moist cookies and you won’t be disappointed!


Blueberry Lemon Pudding Cookies

Yield: About 2 dozen cookies

Blueberry Lemon Pudding Cookies


  • 3/4 cup butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 box (3.4 ounces) instant lemon pudding, dry
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 1/4 cups flour
  • 3/4 cup blueberries


  1. Preheat the oven to 350 degrees.
  2. In a large bowl, cream the butter, sugar, and brown sugar together. Add the lemon pudding mix and beat until incorporated.
  3. Beat in the eggs and vanilla until combined.
  4. In a small bowl combine the flour and baking soda. Slowly add this mixture to the wet ingredients until all ingredients are well incorporated.
  5. Gently stir in the blueberries until they are all mixed into the dough.
  6. Roll the dough into rounded teaspoonfuls and place on an ungreased cookie sheet. Bake for 8-10 minutes.


Make sure to stir in the blueberries very gently. If a blueberry breaks, I found it easier to just take it out than to try to work with the smashed blueberries. If you smash too many blueberries, you can always add some more into the batter.
