Tuna Bruschetta #AppetizerWeek #Anolon

Welcome to Day #2 of Appetizer Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Kristen from Frugal Antics of a Harried Homemaker. With the big football game coming up, we wanted to make sure you had plenty of ideas for your game day spread. Each day we will be dishing up a different set of appetizers. We hope you enjoy this fabulous group of recipes. Tune in each day starting with Monday, January 20 and ending on Saturday, January 25.

Welcome again to Appetizer Week, I am sharing a bunch of different appetizers this week.  Also make sure to stop by and check out all the other great appetizers and the giveaways.  Before I had a blog, back when I was still in school and my husband and I had a tiny apartment, I decided to make him a gourmet like dinner for Valentine’s Day.
In our tiny apartment, we only had basic cable, but for some reason we also got the Food Network.  We used to watch it all the time. At that point I did not have that much experience with cooking, but watching TV taught me a lot. My philosophy was the same as it is now, I want to make great foods with little work.  That is when I created this Tuna Bruschetta, it is incredibly easy to make, but seems a little fancier.

This Tuna Bruschetta is so easy to make and tastes really good.  It includes tuna fish mixed with tomatoes on top of toasted bread.  Then a drop of balsamic vinaigrette dressing is added to give it a little more flavor.  I really love the flavor that the balsamic dressing adds to the tuna and the tomato.  These are a favorite in my house and are perfect to eat while watching the big game.  I hope you enjoy!

Tuna Bruschetta #AppetizerWeek #Anolon

  • 1 baguette, thinly sliced (or buy a pre-sliced baguette)
  • 2 tablespoons olive oil
  • 2 cans tuna fish, drained
  • Mayonnaise (optional)
  • 1 medium sized tomato, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon parsley
  • Balsamic vinaigrette dressing

  1. Preheat the oven to 350 degrees.
  2. Put the olive oil in a small bowl. Then brush both sides of the baguette slices with the olive oil. Then place the baguette slices on a baking sheet lined with parchment paper. Bake the slices for 8-10 minutes or until golden brown.
  3. Meanwhile, in a bowl combine the tuna fish and the desired amount of mayonnaise. (Use as little or as much as you want). Then add in the diced tomato, salt, pepper and parsley. Mix together until combined. Once the baguettes are done, top each slice with about a 1/2 tablespoon of the tuna mixture.
  4. Then add a drop of balsamic vinaigrette dressing to the top to finish it off.

Makes about 35-45
