If you have ever read my blog before, you know that I am a huge fan of Muddy Buddies. I love making them and I love experimenting with new varieties. My favorite part about muddy buddies is that they are super easy to make. They take just a matter of minutes to make.
I also love snacking on muddy buddies, they always taste so good. The only problem is that they are not exactly healthy or the best of snacks. They are covered in chocolate and coated with powdered sugar. That is why I decided to make a healthier version of muddy buddies. These Skinny Muddy Buddies may not be totally healthy, but they are better than the original version and would make a great snack if you are trying to be health conscience.
I decided to make pistachio flavored muddy buddies because pistachios are a healthy snack and I really like them. I added some pistachios in with the cereal as well. These Skinny Pistachio Muddy Buddies are fantastic. I love that I can feel a little better about these muddy buddies. Plus they were really good. They had just enough white chocolate and powdered sugar to give it some sweetness. The pistachio pudding and the pistachios themselves also gave the muddy buddies great flavor. This is an easy and great treat for when I am craving sweets but want to try to be healthier.
