Crock Pot Broccoli Bacon Cheddar Soup

When it is cold outside, there is nothing better than a nice warm bowl of soup.  The best thing is when it is easy to make too.  That is why I love making soups in the crock pot, they really could not get any easier.
One of my favorite soups is Broccoli and Cheddar Soup.  Every time I go to Panera, I order that soup in a bread bowl.  I do not think that I have gone there in the last few years and not ordered that.  Because it is one of my favorite soups, I decided to try to make Broccoli and Cheddar Soup at home.  However, I decided to add bacon to the soup as well, because, well, bacon makes everything better!
This Crock Pot Broccoli Bacon Cheddar Soup is really good.  I love that it can just sit in the crock pot all day and cook, while I can spend time with my family or while I am at work.  I liked the addition the bacon brings to the soup, while it gets blended in, I could still taste the bacon flavor, but it did not overwhelm the flavor of the soup.  The soup can be blended in a blender, by an immersion blender, or you can just eat it with bigger broccoli chunks.  I blended mine in a blender, while I think an immersion blender would work better, I did not have one to use.  I hope that you try this delicious soup.

Crock Pot Broccoli Bacon Cheddar Soup

Crock Pot Broccoli Bacon Cheddar Soup

Ingredients

  • 1/2 cup shredded carrots
  • 1 bag (16 ounces) frozen broccoli, cut into pieces
  • 4 cups chicken broth (a 32 ounce container)
  • 1 cup water
  • 2 garlic cloves, minced
  • 3/4 pound thick bacon (about 9 slices), chopped and cooked
  • 4 cups shredded cheddar cheese
  • 1 can evaporated milk

Instructions

  1. Cook the bacon on the stove top and drain the fat.
  2. Pour the chicken broth into a 5 or 6 quart crockpot. Then add the broccoli, carrots, water, garlic, and bacon. Stir to combine.
  3. Cover and cook on low for at least 5-6 hours. 30 minutes before serving add the evaporated milk and cheddar cheese and stir to combine. Then continue cooking for another 30 minutes.
  4. If desired, work in batches to blend the soup in a blender or with an immersion blender. Blend as much as the soup as you want to get the desired texture. Add all of the blended soup back into the crock pot until it is ready to be served.

  2. I have never made broccoli cheddar soup before. One thing that was surprising was how awful the broccoli smells while cooking in the crockpot with the chicken broth. Once the cheese and evaporated milk was added it was much better smelling and looked like actual soup. It was pretty good in the end. Thank you.

  6. I can’t tell you how disappointing this recipe was. I was so looking forward to a thick, creamy yummy soup on this chilly day while everything around us is flooding. Instead I got this bland, weirdly textured watery mess. I followed it exactly except for adding the bacon, because I don’t eat bacon. Wish I knew what the heck happened. What a waste of time and ingredients. Guess it’s pb&j for dinner tonight.

    • Same thing happened to me. I added more cheese, a can of cheese soup and potato flakes to try and thicken it.

  8. Made this tonight on the stovetop! Yum! I’d say probably feeds 4 if it’s your main dish. My family loved it.
