The holidays are all about spending as much time as I can with my family.  We always eat dinner together every night but it gets harder to put a good dinner on the table when everyone is so busy.  During the holidays we are always so busy with seeing family and baking and shopping that dinner turns into a struggle.  I don’t want to eat take out every night so we are always looking for easy and delicious dinner options.  Easy dinner options are also great for when family comes to visit during the holidays or for holiday entertaining.
Ore Ida’s shredded Hash Brown Potatoes are great for making an easy dish.  These Hash Browns are not just for breakfast either they are great to use to make different dinner dishes and casseroles.  The thing I love is that I can open a bag and have tasty hash brown potatoes with our meal without having to spend all the time to shred the potatoes myself.  This saves me so much time, especially around the holidays when I don’t have a lot of time to spare.  I love the fact that Ore Ida Hashbrowns can help create easy meals, because the less time I have to spend preparing my meal, the more time I can spend with my family.

I decided to make an easy chicken casserole for my family for dinner using the Ore Ida Hashbrowns.  I went to Walmart to pick some up. Last weekend Walmart held demos in stores across the nation demonstrating cooking with Ore Ida Shredded Hash Brown Potatoes.  The Ore Ida Hash Browns currently features Disney’s Frozen Packaging and is running a Disney Frozen Sweepstakes with a prize of winning a family holiday giveaway.    I love that I can use these hash browns to make an easy and delicious dinner for my family.

I decided to make a Barbecue Chicken Hash Brown Casserole with the Ore Ida Shredded Hash Brown potatoes.  The best part about this dish is that the prep is so easy and it only uses one dish, which means less cleaning.
I marinated the chicken for about an hour beforehand, but you can always skip this step if you don’t have enough time.  I like to marinate my chicken because it gives it great flavor.  I mixed the hash browns and other ingredients at the bottom of the pan and placed the barbecue chicken on top.  It does take awhile to cook, but that is so the chicken gets completely done.  Once it goes in the oven you don’t have to worry about it until it is done.  The easy clean up is a great plus too.
This dish was so delicious, I am definitely putting it on our meal plan list.  I loved how easy it was to make and I think the chicken tasted so moist because it cooked on top of the hash browns.  Also the hash browns went great with the chicken and they tasted great with the barbecue sauce on them.  My whole family loved this easy meal.  I hope you enjoy it.

Barbecue Chicken Hash Brown Casserole

Barbecue Chicken Hash Brown Casserole


  • 2 lbs. boneless skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 bag (30 ounces) Ore Ida Shredded Hash Browns Potatoes
  • 2 cups cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup extra virgin olive oil


  1. Place the chicken and 2/3 cup barbecue sauce in a ziploc bag. Make sure the chicken is coated. Marinate in the refrigerator for at least 1/2 hour.
  2. Preheat the oven to 350 degrees.
  3. Place the hash browns, 1 1/2 cups cheddar cheese, salt, pepper, and olive oil in a greased 13x9 pan. Mix all the ingredients until combined. Spread the hash browns out so that they are covering the bottom of the pan.
  4. Arrange the chicken breasts on top of the hash browns. Spread the additional 1/3 cup of barbecue sauce on top of the chicken.
  5. Bake for 45-50 minutes or until the chicken is no longer pink on the inside. Once done sprinkle the additional 1/2 cup of cheddar cheese on top of the chicken. Place back into the oven until the cheese is melted, about 3-5 minutes.


If you do not have time you can skip the marinating step. Just spread the barbecue sauce on top of the chicken.

    • The cheese is not crucial, I think it gives the hash browns good flavor, but I think it would be just as good without it. The only other substitution I can think of instead of just leaving out the cheese is to us Daiya or another dairy free cheese substitute.

    • I think that sounds really good! I’m sure it will taste great. I really liked the taste of the hash browns with the Barbecue sauce. Let me know how it turns out!

  8. This was a HIT! I did add some garlic, onion powder and a splash of chicken stock to the hashbrown mixture and used sharp cheddar cheese. I also used the boneless/skinless chicken thighs, as I didn’t have the breasts on hand, and they were so tender. I never imagined barbeque sauce w/hashbrowns…Will definitely be making this again.

    • You do not need to thaw the hash browns first, you can stick them right in the pan. I haven’t tried in the crock pot but I bet it would work. Let me know how it turns out!

  15. So I only used one pound of thinly sliced chicken breasts, and after 45 minutes the chicken was still completely raw and the hash browns were still kind of crunch. I just put it all back in the oven in two separate dishes and hopefully it will cook through!
