White Chocolate Funfetti Poke Cake

Last week was my 2nd Blogiversary.  I cannot believe that I have been blogging for two years.  I really love blogging and all the components of it. I love the baking, photographing, and the writing and managing of my blog. I also think its so great how much my blog has grown in 2 years. I still want it to grow more, but it is nice to set goals each year and work to see those happen.
That especially goes for my photography.  My goal this year was to start taking better photos.  While I’m not completely there, I think that my pictures have come a long way.  My first post was for Chicken Bacon Ranch Pizza and then compare the photos with my 1st blogiversary post of Cake Batter Cheesecakes.  I think I have improved and I plan of working to get better during the last year.
I couldn’t imagine not working on this blog. I started this blog two years as a hobby and something to keep myself busy once my son was in bed.  It has become so much more than that, it is a real sense of pride for me and something that I feel that I can call my own.  I can’t wait for what is to come next year.
 For my 2nd blogiversary I decided to make a poke cake. I love poke cakes, they make a regular cake so moist and you can never go wrong with the whipped cream on top.  The sweetened condensed milk in the cake makes it so moist.
I think that funfetti cake and sprinkles are great for birthdays and anniversaries, so I decided to make a funfetti poke cake.  I also added white chocolate to the poke cake, because you can never go wrong with white chocolate.  This White Chocolate Funfetti Poke Cake was amazing.  I really loved the combination of the funfetti poke cake, with the sweetened condensed milk, and whipped cream.  This would make a great cake for any party or celebration.  I hope you enjoy it!



White Chocolate Funfetti Poke Cake

White Chocolate Funfetti Poke Cake


  • 1 box funfetti cake mix + the ingredients on the back of the box
  • 1 can (14 ounces) sweetened condensed milk
  • 1/4 cup rainbow sprinkles
  • 1/2 cup white chocolate chips, melted
  • 1 container (8 ounces) whipped cream
  • 1/8 cup rainbow sprinkles
  • Additional sprinkles and white chocolate chips on top (optional)


  1. Prepare the cake according to the directions on the box.
  2. Once the cake is cooled, use a wooden spoon to poke holes evenly throughout the cake, making about 25-30 holes.
  3. Mix the sweetened condensed milk and 1/4 cup sprinkles. Pour the sweetened condensed milk evenly over the cake, trying to fill up the holes.
  4. Spread the melted white chocolate evenly on top of the cake, trying to get some in the holes
  5. Mix 1/8 cup sprinkles and the whipped cream. Spread the whipped cream on top.
  6. Refrigerate until ready to serve. The longer you refrigerate the cake the more the flavors will seep into the cake and the more moist the cake will be. I usually refrigerate the cake overnight. This makes about 12 large pieces. When ready to serve, if desired, sprinkle additional rainbow sprinkles and white chocolate chips on top.
