Crock Pot Cauliflower and Cheese

This Crock Pot Cauliflower and Cheese is an easy and delicious side dish that can be made in the crock pot with little effort.

Growing up we would always have many different side dishes as part of our Thanksgiving dinner.  We had stuffing, mashed potatoes, carrots, sweet potatoes, cranberry sauce, and cauliflower with cheese.  Cauliflower with cheese was always one of our family favorites and my mom still makes it every year.  To make things easier my mom would always just make the cauliflower and cheese from a frozen box since it was easier and she was busy cooking.
The first time I had Thanksgiving dinner at my in-laws, my mother-in-law asked what were some of my favorite side dishes so that it would feel like a traditional Thanksgiving for me.  I told her that my favorite was Cauliflower with cheese.  She made it using fresh cauliflower.  I thought that it tasted great and preferred making it from fresh cauliflower rather than frozen.  However, it then takes up more room in the oven and takes more time to make.  I decided to solve that problem by making the Cauliflower and Cheese in the Crock Pot.
This Crock Pot Cauliflower and Cheese tasted fantastic.  I also love how you can mix the ingredients together and then throw it in the crock pot for 3-4 hours and forget about it.  I even left mine in for closer to 5 hours and it was fine.  This would be the perfect solution for Thanksgiving, you are getting a fresh side dish without all the prep work and without taking up precious space in the oven.
I really liked the cheesy flavor and thought the cauliflower tasted great as well.  This will definitely become the way I make Cauliflower and Cheese from now on and I plan on bringing it in the crock pot for Thanksgiving dinner at my parent’s house this year.  That way we can have the fresh version without all the fuss.

 

Crock Pot Cauliflower and Cheese

Crock Pot Cauliflower and Cheese

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 1 can (10 3/4 ounces) can of condensed Cheddar cheese soup
  • 1/2 cup soy milk (can substitute regular milk)
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 cups shredded cheddar cheese

Instructions

  1. Place the cauliflower florets into a 2 1/2 to 3 1/2 quart crock pot.
  2. In a small saucepan mix together the cheddar soup, milk, salt, and pepper. Cook over medium heat until smooth. Then add in the shredded cheddar cheese and whisk until smooth.
  3. Pour the cheese sauce over the cauliflower and toss to coat the cauliflower.
  4. Cover and cook on low for 3-4 hours or until the cauliflower is tender.
