Avocado Bruschetta and Giveaway

We are big sports fans in our house and we always make sure to make appetizers when we are watching a game.  It is baseball playoff time and that is a great time to make appetizers for the big game.  Unfortunately our favorite team, the Phillies, are not in the playoffs, but we still like to watch the games.  Even though sometimes I think my favorite part of watching sports is the food.  I remember going to baseball games when I was little and my parents would always buy us lots of great food.  I think that’s why I always like to make appetizers and have lots of food while watching baseball.
One of my favorite appetizers is bruschetta. The first time I had bruschetta, my husband’s grandfather made it at a party and it was delicious.  Ever since I was hooked.  We like avocado and thinks it makes great appetizers.  So when we watched the Red Sox versus the Tigers game over the weekend I decided to add avocado to bruschetta, to create a delicious, fantastic appetizer.
Avocados from Mexico are a great way to green up your baseball game day spread by adding avocados to traditional appetizers.  The added avocado to the bruschetta gave the bruschetta a great taste and my family loved it.  Also I love that avocados are healthy, just one ounce of fresh Avocados from Mexico has 50 calories and can enhance any recipe with a creamy, rich flavor that contributes nearly 20 vitamins and minerals, which is an excellent choice for meeting nutrient needs.
The Avocado Bruschetta was a big hit.  I loved the rich and creamy flavor that the avocado gave to one of my favorite appetizers. I also really liked the avocado and tomato combined with the Parmesan cheese on top.  The Parmesan cheese and a drop of balsamic vinaigrette dressing added great additional flavor.
Plus this bruschetta was a perfect appetizer for watching baseball.  My son loved the bruschetta and kept asking for more avocado.  I think the avocado adds so much more to the traditional bruschetta and I plan on making my bruschetta with avocado from now on.  I hope you try this great appetizer to your baseball game watching line up or serve it at your next party.

 

 

Avocado Bruschetta

Avocado Bruschetta

Ingredients

  • 1 baguette, thinly sliced (or buy a pre-sliced baguette)
  • 1/4 cup olive oil
  • 1 avocado, pitted and diced
  • 1 medium sized tomato, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon basil
  • Juice of half a medium sized lime
  • 1 tablespoon Parmesan cheese, shredded
  • Balsamic vinaigrette dressing (optional)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Put 2 tablespoons of olive oil in a small bowl. Then brush both sides of the baguette slices with the olive oil. Then place the baguette slices on a baking sheet lined with parchment paper. Bake the slices for 8-10 minutes or until golden brown.
  3. Meanwhile, in a bowl combine the diced avocado, diced tomato, salt, pepper, basil, lime juice, and remaining 2 tablespoons of olive oil. Gently mix together until combined. Once the baguettes are done, top each slice with the avocado tomato mixture.
  4. Sprinkle the Parmesan cheese on top of each slice. Then add a drop of balsamic vinaigrette dressing to the top to finish it off.
