Apple Butter Stuffed Cinnamon Muffins and Giveaway

These Apple Butter Stuffed Cinnamon Muffins are filled with Musselman’s Apple Butter. There is apple butter in each bite!

I cannot believe that it is already October and that fall is here, this year is going so fast.  Fall is one of my favorite times of the year.  I love the falling leaves and all the holidays and of course the food associated with fall.  When I think of fall food, I immediately think of apples.
When Musselman’s contacted me to make something using their apple butter I was excited.  We are a big fan of Musselman’s applesauce and have always loved apple butter.  The first time I had apple butter was when I was younger, probably about 8 or 9.  I remember that my dad brought some home that someone had made for him and we ate it on bread or muffins.  It was so delicious and I think that apple butter tastes great on bread or muffins.
Musselman’s is trying to put a spin on classic recipes using their Apple Butter.  They have even released a new apple butter e-recipe book so that you can use their delicious apple butter in all sorts of classic recipes.
I really loved the Musselman’s Apple Butter, I thought it tasted delicious and it tasted just like the apple butter I had as a kid.  Since I remember eating apple butter on muffins as a kid, I decided to put a classic spin on that concept and create Apple Butter Stuffed Cinnamon Muffins.  These cinnamon muffins were delicious and there was a pocket of apple butter in the middle.  I loved how there was apple butter in every bite of the muffin and it was just like eating a muffin with apple butter on it.
These Apple Butter Stuffed Cinnamon Muffins were great cinnamon muffins and I really love the apple butter in each bite. The great thing about these muffins is that you can also make this as a bread, with an apple butter center.  I hope that you try these delicious muffins that are a spin on a classic muffin with apple butter.
Apple Butter Stuffed Cinnamon Muffins

Apple Butter Stuffed Cinnamon Muffins

  • 2 cups flour
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup butter, melted
  • 2 eggs
  • 2/3 cup soy milk (can substitute regular milk)
  • 1 teaspoon vanilla
  • 3 tablespoons Musselman's Apple Butter
  • Topping
  • 1 tablespoon brown sugar
  • 1/2 tablespoon sugar
  • 1/2 teaspoon cinnamon

  1. Preheat the oven to 400 degrees.
  2. In a large-sized bowl whisk together the flour, brown sugar, sugar, salt, baking powder, and cinnamon.
  3. In a medium-sized bowl whisk together the butter, eggs, milk, and vanilla until they are well combined.
  4. Slowly pour the dry ingredients into the liquid ingredients and stir until combined.
  5. Line 12 muffin cups with liners. Fill each muffin cup 1/3 way full. Then spoon 1 teaspoon of apple butter into the center of the batter. Then cover the apple butter with more batter, making sure to cover all of the apple butter and fill the muffin cups 2/3 of the way full. Repeat for each muffin cup.
  6. Combine the topping ingredients in a small bowl. Sprinkle the topping evenly over the top of each muffin making sure to cover all of the batter.
  7. Bake the muffins for 17-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 5 minutes then remove the muffins and continue to cool on a wire rack. Store in an airtight container.

These muffins can also be made as a bread. If making as a bread put 1/2 of the batter into the bread pan. Then put the apple butter, then the rest of the batter. The cooking time will probably be longer if made as bread.
