Pumpkin Pie Bites

Delicious and easy Pumpkin Pie Bites that taste just like pumpkin pie, but without the time involved.

 Today I am participating in a virtual birthday party for Julie at This Gal Cooks.  Make sure to stop by Julie’s blog and wish her a happy birthday.  In honor of Julie’s birthday, I joined together with other bloggers to make pumpkin recipes. The first day of fall was on Sunday and it is the perfect time for pumpkin.  I decided to make these easy and delicious Pumpkin Pie Bites to help Julie celebrate her birthday.
These Pumpkin Pie Bites taste just like pumpkin pie, but they are much easier to make.  These bites are made using refrigerated pie crusts with pumpkin in the middle.  They are then topped with a mixture of sugar and pumpkin pie spice.  These are flaky and delicious mini pumpkin bites that are a great fall treat. These pumpkin bites taste like pumpkin pie without having to make a whole pie.  I hope that you enjoy this easy and delicious treat!

Pumpkin Pie Bites


  • 1 box refrigerated pie crusts (2 crusts per box)
  • 1 can (15 ounces) pure pumpkin
  • 2 tablespoons butter, melted
  • 3 tablespoons sugar
  • 3/4 teaspoon pumpkin pie spice


  1. Preheat the oven to 350 degrees.
  2. Roll out each pie crust and cut out 3 inch circles. Roll out the extra dough to get even more 3 inch circles.
  3. Add 1/2 teaspoon of pumpkin to the middle of each circle.
  4. Fold each circle in half and seal up the pie crust, making sure that no filling gets out. (If any filling seeps out, just wipe it away). Place the pie bites on a cookie sheet covered with parchment paper.
  5. Brush both sides of the pie bites with the melted butter. In a small bowl mix together the sugar and the pumpkin pie spice. Then coat both sides of the pie bites in the sugar mixture.
  6. Bake the pie bites for 10-15 minutes or until golden brown. This makes about 15-20 pie bites.


You can also use pumpkin pie filling, but it is not as thick and is messier to work with. The advantage of using that is that it is sweeter. I tried both and I think they both tasted great.

I used the top of a cup to cut out the 3 inch circles.
