Raspberry Banana Bread

This Raspberry Banana Bread is a delicious bread with bananas and raspberries that is great for breakfast or dessert.

We are big bread people in my family.  My husband and I both love bread and we have passed that love onto our son.  I especially love dessert bread.  Banana Bread is one of my favorites.  I love how moist banana bread can be and how versatile it is.  You can add a lot of things to banana bread and make a tasty treat and its great plain too.

Because its summer and raspberries are in season, I decided to add raspberries to my favorite banana bread recipe.  This Raspberry Banana Bread was so delicious.  I really loved how moist the banana bread was.  Plus, it tasted fantastic and is a great summer treat that is great for breakfast or dessert.
I think the flavors of the raspberries and the banana went great together.  Especially the fact that raspberries are a little tart, add a great flavor to the bread that is not too sweet.  With my husband and son starting school again soon, this would be a great bread to make on the weekend and then you can have a great breakfast for the whole week.
This Raspberry Banana Bread has great flavor and I love the combination of the banana and raspberries. This is a great bread that we all enjoyed and that we will be making again! Enjoy!

 

Raspberry Banana Bread

Raspberry Banana Bread

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/2 cup sour cream
  • 1 cup mashed banana
  • 3/4 cup raspberries, chopped

Instructions

  1. Preheat the oven to 350 degrees.
  2. Beat the butter and sugar until they are creamy. Then beat in the eggs and vanilla.
  3. Combine the baking soda and the flour and slowly beat in the flour mixture to the butter mixture.
  4. Then stir in the bananas, sour cream, and raspberries until combined.
  5. Pour the banana mixture into a greased 9x5 pan. Bake for 1 hour to 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Cool for 10-20 minutes in the pan and then remove and continue to cool on a wire cooling rack.
