Caramel Apple Poke Cake

This Caramel Apple Poke Cake is a delicious and moist cake with the flavors of caramel and apple throughout. It tastes just like caramel apple pie!

My birthday was last week and I decided to make myself a cake for my birthday.  My favorite type of cakes are poke cakes and I know I needed to make a new variation of a poke cake.  With fall right around the corner, I decided to make a Caramel Apple Poke Cake.  Even though apples are great for the fall, this cake would be good anytime of the year.  I had read about the Lucky Leaf Recipe Contest on Something Swanky’s blog.  I thought it would be great to use Lucky Leaf Premium Apple Pie Filling to make the perfect Apple Poke Cake.
This cake was so delicious and I think that it tasted just like a Caramel Apple Pie but in cake form.  I used the Lucky Leaf Premium Apple Pie filling for the apples and mixed it with caramel sauce.  I really loved the combination of the caramel and apple with the white cake and the caramel and apple flavor of the whipped cream also tasted fantastic.
This has been one of the favorite poke cakes that I have ever made, and that is saying a lot.  Every component, the cake, sweetened condensed milk, caramel, apples, and whipped cream add a great flavor to the cake.  I seriously have not been able to stop eating this cake and have had a piece every night since my birthday. Plus this cake is easy to make. I know you will love this delicious and moist cake with great caramel apple flavor!

 

Caramel Apple Poke Cake

Caramel Apple Poke Cake

This Caramel Apple Poke Cake is a delicious and moist cake with the flavors of caramel and apple throughout. It tastes just like caramel apple pie!

Ingredients

  • 1 box white cake mix + the ingredients on the back of the box
  • 1 can (14 ounces) sweetened condensed milk
  • 1 1/2 cups Lucky Leaf Premium Apple Pie Filling
  • 1/2 cup caramel ice cream topping
  • Whipped Topping
  • 1 container (8 ounces) whipped cream
  • 2 tablespoons apple pie filling, without apples
  • 1/4 cup caramel ice cream topping
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Prepare the cake according to the directions on the box.
  2. Once the cake is cooled, use a wooden spoon to poke holes evenly throughout the cake, making about 25-30 holes.
  3. Pour the sweetened condensed milk evenly over the cake, trying to fill up the holes.
  4. Chop up the apples contained in the 1 1/2 cups of apple pie filling into smaller pieces. Then combine the apple pie filling and caramel ice cream topping in a medium sized bowl. Microwave the combined toppings for 15 seconds or until melted together and warm.
  5. Spread the caramel apple topping evenly on top of the cake, trying to get some in the holes.
  6. For the whipped cream, mix the caramel ice cream topping and 2 tablespoons of just the filling part of the apple pie filling into the whipped topping container. Mix together until combined then spread the whipped cream on top. Then sprinkle cinnamon on top of the whipped cream.
  7. Refrigerate until ready to serve. The longer you refrigerate the cake the more the flavors will seep into the cake and the more moist the cake will be. I usually refrigerate the cake overnight. This makes about 12 large pieces.

  10. Just curious..is there any particular reason you pour the sweetened condensed milk separately from the apple caramel mixture rather than mix all those things together and make one pour? I hope to try this recipe very soon. Sounds like something I would love.

    • That is how I’ve always done it with poke cakes that I have made, is to pour the sweetened condensed milk separately. I don’t think there would be any issue with mixing it together with the apples and the caramel sauce. As long as you are making sure that the mixture gets as much in the holes as possible it shouldn’t matter which way you do. I hope that you really enjoy the cake!

  17. Just made some pie filling, now I know what to do with it other than a pie. I was wondering if using the apple pie spice instead of cinnamon would be too overpowering if done in moderation. The recipe looks amazing as all of yours usually do!

    • Thanks Rochelle! I think using the apple pie spice would be fine. I would start by adding a small amount and then add more if needed. I hope you enjoy!
