S’mores Muffins

When I think of summer I think of S’mores.  S’mores are the perfect summer treat and I love food that combines the flavors of s’mores.  I decided to make S’mores Muffins, that have graham crackers, marshmallows, and chocolate chips in them.  Then the muffins are topped with a graham cracker struesel topping.
These muffins would be great for breakfast or for a snack.  Muffins can be such an easy breakfast.  You can make them over the weekend and have breakfast for the whole week, that is if you don’t eat them all in one setting. I really like that they are very versatile.
These muffins were so good, I couldn’t stop eating them.  My son kept asking for “buffins” as he called them.    I really liked the S’mores flavor in the muffin.  The graham cracker struesel was my favorite part. It just added so much great flavor to the muffin.  These S’mores Muffins are great for breakfast or a tasty snack.  I hope that you enjoy them, I know my family did.
S’mores Muffins

S’mores Muffins


  • 2 cups flour
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup butter, melted
  • 1/2 cup marshmallow fluff
  • 2 eggs
  • 2/3 cup soy milk (can substitute regular milk)
  • 1 teaspoon vanilla
  • 1/2 cup graham crackers, crushed (can have some pieces)
  • 2/3 cup mini chocolate chips
  • Graham Cracker Struesel
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/2 graham crackers, crushed
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter, melted


  1. Preheat the oven to 400 degrees.
  2. In a large-sized bowl whisk together the flour, brown sugar, sugar, salt, and baking powder.
  3. In a medium-sized bowl whisk together the butter, marshmallow fluff, eggs, milk, and vanilla until they are well combined. (The marshmallow fluff may not completely combine and may be a little clumpy until it is mixed with the dry ingredients).
  4. Slowly pour the dry ingredients into the liquid ingredients and stir until combined. Once combined, gently fold in the graham crackers and mini chocolate chips.
  5. Line 12 muffin cups with liners. Evenly divide the batter into the muffin liners.
  6. Graham Cracker Struesel
  7. In a medium sized bowl combine the flour, brown sugar, graham crackers, and cinnamon.
  8. Add the melted butter and mix until crumbly. It should look like wet sand.
  9. Top each muffin with 1 tablespoon of topping.
  10. Bake the muffins for 17-20 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool for 5 minutes then remove the muffins and continue to cool on a wire rack. Store in an airtight container. If desired, when serving heat up in the microwave for about 15 seconds to melt the chocolate.
