Peanut Butter Cookie Fudge Pie

I am posting another pie as part of Pies in July week. This pie is not your ordinary type of pie.  This Peanut Butter Cookie Fudge Pie combines three of my favorite treats, to create a fantastic and decadent pie. The pie consists of  chocolate peanut butter fudge enveloped by peanut butter cookie on both sides.  To top that off they are all sitting on top of an Oreo crust. Yum!
This pie was really rich, so it is better to have small slices at a time.  It was really delicious and I loved the combination of the peanut butter cookie with the peanut butter and chocolate fudge.  You can’t go wrong with chocolate and peanut butter! Cookies and fudge taste fantastic together and the Oreo crust just puts it over the top.
Also this pie was really easy to make.  I made my own Oreo crust, which does not take long or you can even use a pre-made crust.  I also used refrigerated peanut butter cookie dough for the cookie part.   This easy and decadent pie is a great treat.  I hope that you try it!

Peanut Butter Cookie Fudge Pie

Ingredients

  • 1 package (14.3 ounces) Oreos, crushed
  • 1/4 cup butter
  • 1 roll (16.5 ounces) refrigerated peanut butter cookie dough
  • 1 can (14 ounces) sweetened condensed milk
  • 1 bag (11 ounces) mixed chocolate and peanut butter chips (or just use 1 cup of each)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Take the crushed Oreos and mix with the melted butter in a pie plate. Press the crust into the bottom of the pie plate.
  3. Press half of the peanut butter cookie dough on top of the Oreo crust, covering the bottom of the crust.
  4. In a small saucepan, combine the chocolate and peanut butter chips and sweetened condensed milk. Stir constantly over low heat until the chips are fully melted, then remove from the heat.
  5. Spread the chocolate and peanut butter mixture on top of the peanut butter cookie dough.
  6. Sprinkle small pieces of the remaining peanut butter cookie dough over the fudge mixture.
  7. Bake for 25-35 minutes or until the cookie is golden brown and the fudge is set. Cool completely before slicing. The fudge layer will be gooey and soft.
