Easy Sand Dollar Cookies

We are enjoying our trip to Myrtle Beach this week.  It is nice to be able to go to the beach whenever we want.  Because we are at that the beach this week, I thought that I would post a beach themed dessert.  I made these Sand Dollar Cookies a few weeks ago for one of my son’s friends birthday party.  The party had an Under the Sea Theme.
These Sand Dollar cookies were so easy to make and tasted delicious.  They are made easily using refrigerated sugar cookie dough.  I really loved the taste of the sugar cookies with the almonds. I really liked how the cookies were crispy.  These would be great for any beach or sea themed party or just for a great tasty and easy snack.  These are also a great way to have your kids to help out in the kitchen.

Easy Sand Dollar Cookies

Ingredients

  • 1 roll (16.5 ounces) refrigerated sugar cookie dough
  • 3 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup flour
  • Sliced almonds

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl combine the cinnamon and sugar and set aside.
  3. Roll out the dough to 1/4 thick on a floured surface and cut the dough into about 3 inch circles. (I used the cap to a Pam container). Roll each circle in the cinnamon and sugar mixture until it is covered. Press 5 almond slices into the center of each circle. Place the circles on an ungreased cookie sheet, 2 inches apart.
  4. Bake for 3-4 minutes then take the cookie sheet out and gently press the almonds down again, making slight indentations. Bake for an additional 7-10 minutes or until the cookies are golden brown. Store the cookies in an airtight container.
