S’mores Banana Bread

It is officially summer.  Summer has always been my favorite season.  When I was a kid it was because of my birthday and having off school.  Now I have to work during the summer and am jealous of my husband (a teacher) for having off.  I still love the weather and love spending time outside and going to the pool and to the beach. One of my favorite parts of summer is S’mores.  I always liked making S’mores over the fire and having a great time outside.
I decided to combine my favorite taste of summer, S’mores, with Banana Bread to create a S’mores Banana Bread.  This banana bread was so delicious and moist.  I loved the taste of the chocolate chips, marshmallows, and graham crackers with the traditional taste of the banana bread.   They tasted fantastic together.  This would be great for breakfast or for a snack during the summer or any time of the year.  I plan on making this again for breakfasts when we go to the beach.  I hope you enjoy this wonderful twist on banana bread!

S’mores Banana Bread

S’mores Banana Bread

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/2 cup sour cream
  • 1 cup mashed banana
  • 1/2 cup graham crackers, crushed (can have some pieces)
  • 3/4 cup mini chocolate chips
  • 3/4 cup mini marshmallows

  1. Preheat the oven to 350 degrees.
  2. Beat the butter and sugar until they are creamy. Then beat in the eggs and vanilla.
  3. Combine the baking soda and the flour and slowly beat in the flour mixture to the butter mixture.
  4. Then stir in the bananas, sour cream, graham crackers, mini chocolate chips, and mini marshmallows until combined.
  5. Pour the banana mixture into a greased 9x5 pan. Bake for 1 hour to 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Cool for 10-20 minutes in the pan and then remove and continue to cool on a wire cooling rack.

Recipe doesn’t say how much flour?

    • Thank you for bringing that to my attention. I’m sorry about that, I must have forgot to add that in. The recipe needs 1 1/2 cups flour and I have updated the recipe to reflect that.

I have made this bread twice already, and making it for a 3rd time today for my family coming into town. This bread comes out moist and delicious every time!! I am in love with this recipe and haven’t changed a thing to the recipe! (except maybe “accidentally” pouring in extra chocolate chips ;)).

    • I’m so glad that you have enjoyed it! I really like the banana bread recipe and the S’mores flavor in it tastes great. Extra chocolate chips are never a bad thing!
