Reese’s Peanut Butter Muffins

These Reese’s Peanut Butter Muffins are delicious peanut butter muffins that are stuffed with mini Reese’s Peanut Butter Cups.

I have many different food combinations that I like, but my favorite one has to be chocolate and peanut butter, hands down.  I decided to make peanut butter muffins that are stuffed with Reese’s peanut butter cups, you can’t get any better than that.
The nice thing about muffins is that they are an easy breakfast.  You can make them over the weekend and have breakfast for the whole week, that is if you don’t eat them all in one setting. They are also good for snack and dessert, I really like that they are very versatile.
These Reese’s Peanut Butter Muffins were fantastic! I loved the taste of the peanut butter in the muffin combined with the chocolate and peanut butter flavor from the Reese’s peanut butter cups.  My husband and son also loved these muffins.  I brought them over to my parent’s house and everyone loved them too.  We all couldn’t stop eating them.
The muffins are also good heated up in the microwave to melt the Reese’s a little bit, they are fantastic that way and with a little bit of butter.  These muffins would be a great breakfast or treat for Mother’s Day! I know I would love it if my husband and son made these for me.  I hope you enjoy them!
 
Reese’s Peanut Butter Muffins

Reese’s Peanut Butter Muffins

Ingredients

  • 2 cups flour
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup butter, melted
  • 1/2 cup peanut butter
  • 2 eggs
  • 2/3 cup soy milk (can substitute regular milk)
  • 1 teaspoon vanilla
  • 1 cup Mini Reese's Peanut Butter Cups, halved

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a large-sized bowl whisk together the flour, brown sugar, sugar, salt, and baking powder.
  3. In a medium-sized bowl whisk together the butter, peanut butter, eggs, milk, and vanilla until they are well combined.
  4. Slowly pour the dry ingredients into the liquid ingredients and stir until combined. Once combined, gently fold in the Reese's Peanut Butter Cups.
  5. Line 12 muffin cups with liners. Evenly divide the batter into the muffin liners. Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool for 5 minutes then remove the muffins and continue to cool on a wire rack. Store in an airtight container. If desired, when serving heat up in the microwave for about 15 seconds to melt the chocolate. If desired, serve with butter.
