Caramel Cinnamon French Toast Bake

This year has been going so fast, I cannot believe that it is already mid way through April.  That means that Mother’s Day is coming up in less than a month.  When I think of Mother’s Day I think of brunch.  I think eating a nice brunch is a great way to spend Mother’s Day, especially if your family is the one cooking the brunch for you!
One of my favorite breakfast recipes is Cinnamon French Toast Bake, which is made with refrigerated cinnamon buns.  When I was grocery shopping one day I saw Caramel Cinnamon Rolls.  I decided to make a French Toast Bake using the Caramel Cinnamon Rolls and drizzled the delicious caramel glaze on top.
This Caramel Cinnamon French Toast Bake was fantastic! I really loved the combination of the caramel with the cinnamon french toast.  I also added pecans to the top, which is optional, but I loved the taste of the pecans with the caramel.  This was a fantastic and tasty breakfast and would make a great brunch for Mother’s Day!

Caramel Cinnamon French Toast Bake


  • 1/4 cup melted butter
  • 2 cans Pillsbury refrigerated Caramel Rolls with icing
  • 5 eggs
  • 1/2 cup heavy whipping cream
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla
  • 1 cup chopped pecans (optional)


  1. Preheat the oven to 375 degrees.
  2. Pour the melted butter into an ungreased 13x9 glass baking dish. Separate both cans of refrigerated Caramel Rolls into 16 rolls, setting the icing aside. Then cut each Caramel Roll into 8 pieces and place the pieces on top of the butter in the baking dish.
  3. In a medium bowl beat the eggs. Then beat in the heavy whipping cream, cinnamon, and vanilla until they are well blended. Then gently pour over the Caramel Roll pieces. Sprinkle the top with the pecans.
  4. Bake for 20 to 28 minutes or until golden brown. Cool for 15 minutes.
  5. Microwave the icing on medium (50%) for 10-15 seconds or until it is thin enough to drizzle. Drizzle the icing over the top of the French Toast Bake. Serve with syrup if desired.
